How to Make Delicious Curry Fried Rice with Plenty of Bell Peppers and Mushrooms
I recently bought a lot of bell peppers and came up with this dish. Stir-frying lots of bell peppers and mushrooms and serving them with curry fried rice creates a perfect harmony of flavors. It truly tastes like authentic Indian or Southeast Asian cuisine. It’s an excellent vegetarian option as it contains no meat. Despite being packed with vegetables, it feels light and satisfying after a meal. Paprika and Mushroom Stir-fry Ingredients- 1/2 Yellow bell pepper
- 1/2 Red bell pepper
- 1/4 Onion
- 3 Shiitake mushrooms
- 1/2 Spicy chili pepper (optional, for added heat)
- 3 Perilla leaves
- 40g Green onion
- 1 Tbsp Soy sauce
- 1/2 Tbsp Minced garlic
- 1 Tbsp Oligosaccharide (or honey/sugar)
- 1 Tbsp Mirin (rice wine)
- 1 Tbsp Lemon juice
- 1/2 tsp Salt
- 1 Tbsp Cooking oil
Curry Fried Rice Ingredients- 2 bowls Cooked rice
- 1/2 Tbsp Minced garlic
- 2 Tbsp Curry powder
- 10g Butter
- 2 bowls Cooked rice

Cooking Instructions
Step 1
First, prepare the vegetables. Remove the seeds from the yellow and red bell peppers and julienne them into about 1cm wide strips. Slice the onion similarly into strips, and trim the stems from the shiitake mushrooms before slicing them into 3-4 pieces.
Step 2
Wash the fresh perilla leaves thoroughly, pat them dry, then roll them up tightly and slice them as thinly as possible. The aromatic perilla leaves will add a wonderful fragrance to the fried rice.
Step 3
Now, let’s make the paprika and mushroom stir-fry. Preheat a frying pan over medium heat and add 1 tablespoon of cooking oil. Add the chopped green onions and stir-fry until fragrant, being careful not to burn them. You’ll know it’s ready when a sweet green onion aroma fills the air.
Step 4
Once the green onion aroma is pronounced, add 1/2 tablespoon of minced garlic and stir-fry together to infuse the oil with garlic flavor. Keep the heat moderate to prevent the garlic from burning.
Step 5
When the garlic is fragrant, add the sliced onion and stir-fry until it becomes translucent. Once the onion is somewhat softened, add the julienned bell peppers, shiitake mushrooms, and the finely chopped spicy chili pepper if you desire extra heat. Pour in 1 tablespoon of soy sauce, 1 tablespoon of mirin, 1 tablespoon of oligosaccharide, 1 tablespoon of lemon juice, and 1/2 teaspoon of salt. Stir-fry everything together until the ingredients are well combined and coated. Adjust the salt to your taste.
Step 6
When the mushrooms are tender and all the vegetables are deliciously flavored, your paprika and mushroom stir-fry is ready! Transfer the stir-fried vegetables to a plate.
Step 7
For the fried rice, use the same pan (or a wok). Add 10g of butter and melt it over low heat. Once the butter is melted, add 1/2 tablespoon of minced garlic and sauté briefly until fragrant, creating a delicious garlic butter oil. Be careful not to burn the garlic.
Step 8
Add 2 bowls of warm cooked rice to the pan, then sprinkle 2 tablespoons of curry powder evenly over the rice. Use a spatula to break up any clumps and stir-fry vigorously, ensuring the curry powder coats every grain of rice. Continue to stir-fry until the rice becomes fluffy and slightly dry.
Step 9
On your serving plate, arrange the delicious curry fried rice on one side and the colorful paprika and mushroom stir-fry on the other. The vibrant colors will make the dish even more appealing.
Step 10
