Main Ingredients- 1 bunch fresh Crown Daisy (approx. 150g)
- 2 large Eggs
- 3 cups Pancake Mix (approx. 300g)
- 0.5 cup cold Water (approx. 100ml)
- 1/3 small Onion (approx. 50g)
Cooking Instructions
Step 1
First, thoroughly wash the crown daisy and pat it dry. Remove any tough stems, keeping only the tender leaves and stems. Cut them into roughly 5cm (2-inch) lengths for easy eating. This preparation ensures a pleasant texture in the finished pancake.
Step 2
Peel the onion and slice it thinly or mince it finely. Adding the prepared onion to the batter will lend a subtle sweetness and enhanced flavor to the pancakes.
Step 3
Now, let’s make the batter. In a large bowl, combine 3 cups of pancake mix. Pour in 0.5 cup of cold water. Crack in the 2 eggs, and add the chopped onion and crown daisy.
Step 4
Using a spatula or chopsticks, mix all the ingredients together until well combined. The batter should not be too thick or too thin, with all ingredients evenly incorporated without lumps. Ensure the crown daisy and onion are distributed throughout.
Step 5
Heat a frying pan over medium heat and add a generous amount of cooking oil or perilla oil. Once the pan is sufficiently hot, it’s ready for cooking. Be careful not to use too little oil, as this can cause the pancakes to stick or burn.
Step 6
Using a ladle or spoon, scoop the batter and spread it thinly onto the heated pan. It’s important to spread it evenly so the crown daisy doesn’t clump together. You’ll know it’s ready to flip when the edges start to look golden brown and crispy.
Step 7
Once the bottom side is golden brown, carefully flip the pancake using a spatula or tongs. Cook the other side until it’s also golden and crispy. Continue cooking for about 2-3 minutes per side, or until both sides are beautifully golden and the pancake is cooked through. You can adjust the cooking time for a crispier or softer finish according to your preference.
