  • Delicious vegetable ssamjang made with doenjang (soybean paste)
  • Warm cooked rice

Vegetable Ssamjang to Balance the Bitterness of Colt’s Foot Leaves

  • 2 Tbsp Doenjang (soybean paste) (generously)
  • 1 Tbsp Gochujang (red chili paste) (adjust to taste)
  • 1 Tbsp minced garlic
  • 1/2 small onion, finely chopped
  • 1 green chili pepper, finely chopped (for a spicy kick)
  • A little carrot, finely chopped (adds color and texture)
  • A pinch of toasted sesame seeds (for nutty aroma)
  • 1 Tbsp sesame oil (for shine and fragrance)

Rice Seasoning (Tip for Fluffy Rice Grains)

  • 1 bowl of warm cooked rice
  • 1 Tbsp rice vinegar or cooking wine (removes raw smell & adds gloss)
  • 1 Tbsp sesame oil (for a nutty aroma)
  • A pinch of toasted sesame seeds (for garnish)

First, finely chop the vegetables that will give the ssamjang its flavor. Dice the carrot, onion, and green chili pepper into pieces slightly smaller than rice grains so they blend well into the ssamjang.

In a bowl for making the ssamjang, add a generous 2 tablespoons of doenjang and 1 tablespoon of gochujang. (You can adjust the ratio of doenjang and gochujang to your preference.)
