Compote Ingredients- 100g frozen pineapple
- 5 apples
- 4 Tbsp brown sugar
- 2 Tbsp ground cinnamon
- 4 Tbsp cooking wine (cheongju) or white wine
Cooking Instructions
Step 1
Start with the frozen pineapple. Since apples are the main ingredient, we’re using just a small amount of pineapple to add a lovely aromatic touch. Its sweet fragrance and flavor will greatly enhance the compote. You can even save any leftover pineapple to make another delicious compote later!
Step 2
Wash the apples, remove the cores, and slice them into pieces about 1cm thick. Avoid slicing them too thinly, as we want them to hold their shape somewhat while cooking. You can even cut them slightly thicker if you prefer.
Step 3
In a pot, combine the sliced apples and frozen pineapple. Add the brown sugar and ground cinnamon. The warm spice of cinnamon pairs beautifully with apples, creating a wonderful aroma. For an extra layer of flavor and to help tenderize the fruit, add 4 tablespoons of cooking wine (cheongju) or white wine. Stir everything together and simmer gently over low heat, being careful not to let it burn.
Step 4
Continue to cook the mixture until the apples are completely tender and the compote has thickened to a jam-like consistency. Your ‘Apple Pineapple Compote’ is now ready! It’s delicious served warm, but also tastes wonderful chilled. Enjoying this hearty apple compote can also be a comforting way to help ward off colds during changing seasons.
Step 5
Once the compote has cooled slightly, transfer it to an airtight container and store it in the refrigerator. It will keep for several days and is perfect for a quick snack or dessert. You can also gently reheat it in the microwave. Now, let’s use this delicious compote to make canapés! Heat a dry frying pan and lightly toast one tortilla on both sides until golden and slightly crisp.
Step 6
Cut the toasted tortilla into bite-sized pieces for your canapés. You can do this by cutting the tortilla in half, then cutting each half into wedges, similar to slicing a pizza. Aim for about 4 to 6 pieces per tortilla.
Step 7
Prepare the toppings for your canapés. You’ll need the apple compote, slices of savory prosciutto, and fresh mozzarella cheese.
Step 8
On each piece of toasted tortilla, spoon a generous amount of the prepared apple pineapple compote. This sweet and fragrant layer will form the delicious base of your canapé.
Step 9
Next, artfully arrange a slice or two of the savory prosciutto on top of the compote. The amount of prosciutto can be adjusted to your preference, but ensure it’s a size that can be enjoyed in one bite along with the other ingredients. Likewise, adjust the amount of apple compote as needed.
Step 10
Finally, place a piece of fresh mozzarella cheese on top to complete your ‘Apple Compote Canapés’. The delightful harmony of salty prosciutto, sweet compote, and creamy cheese, combined with the satisfying crunch of the tortilla, makes these an absolutely wonderful appetizer for enjoying with a glass of wine. Happy cooking!
