When I’m short on side dishes, a rolled omelet is always my go-to recipe. My daughter particularly loves egg dishes, and a rolled omelet, especially one with various ingredients, is simple yet delicious. The charm of a rolled omelet lies in its versatility; it can transform with different additions. Today, I’ve made it with plenty of fresh chives. Ingredients- 1 bunch of chives (about 30g)
- 3 fresh eggs
- 3 pinches of salt
- 2 pinches of black pepper
- A little cooking oil or butter

First, prepare the fresh chives. You’ll need about a 100-won coin’s worth. Wash them thoroughly, pat them dry, and mince them very finely. It’s important to chop the chives finely so their aroma distributes evenly throughout the egg mixture.

In a bowl, crack the 3 fresh eggs and whisk them well. Removing the chalazae (the white, stringy bits) will result in a smoother omelet. Add the finely minced chives to the eggs. Then, add 3 pinches of salt and 2 pinches of black pepper. Use chopsticks or a whisk to mix everything thoroughly, ensuring there are no clumps of chives or egg whites.
Step 3
Heat a non-stick pan over medium-low heat and add a little cooking oil or butter, coating the pan evenly. Pour the chive and egg mixture into the heated pan. As the egg begins to set, gently stir with chopsticks to allow the uncooked egg to flow to the bottom, creating a thin, even layer across the pan.
Step 4
Maintaining a low heat is crucial. Once the egg is about halfway cooked, carefully fold one side towards the center, then roll it up towards the other side. Continue to pour in more egg mixture and roll as it cooks, ensuring the heat is low enough to prevent burning. Repeat this process, gently pushing the cooked omelet to one side, pouring in more egg, and rolling again, to create a thick, layered omelet.
