Aromatic Chive Soybean Paste Soup (Naengi Doenjangguk)
Spring’s Fragrance in a Bowl: Delicious Naengi Doenjangguk Recipe
A comforting and hearty soybean paste soup featuring fresh naengi (Korean field cress). Perfect for a light and satisfying breakfast or a revitalizing meal.
Main Ingredients- 3 handfuls of fresh naengi (Korean field cress, carefully trimmed of roots and washed thoroughly)
- 1 block of soft tofu (cut into bite-sized cubes)
- 1 stalk of green onion (finely chopped)
Broth Base- 1 handful of dried anchovies for broth
- 2 pieces of green onion roots
- 1 piece of radish (approx. 5cm)
Seasoning- 4 Tbsp of soybean paste (adjust to your preference, can use homemade or store-bought)
- 1 Tbsp minced garlic
- Natural seasoning (anchovy, shrimp, kelp) to taste (enhances savory flavor)
- 1 handful of dried anchovies for broth
- 2 pieces of green onion roots
- 1 piece of radish (approx. 5cm)

Cooking Instructions
Step 1
In a pot, pour 1500ml of water. Add the dried anchovies, green onion roots, and radish. Simmer over medium heat for about 5 minutes to extract a flavorful broth.
Step 2
Once the broth has infused, remove and discard all the solid ingredients (anchovies, green onion roots, radish), leaving a clear broth.
Step 3
Add the soybean paste to the clear broth. It’s best to strain it through a sieve to ensure it dissolves smoothly without lumps.
Step 4
Add the freshly trimmed and washed naengi to the pot and bring it to a boil. Let it simmer until the fragrant aroma of the naengi fills the air. Once the soup is gently bubbling, add the next ingredients.
Step 5
Add the cubed tofu and chopped green onion. Then, stir in 1 Tbsp of minced garlic and the prepared natural seasoning for an added depth of flavor. Continue to simmer until the tofu is cooked through and all ingredients are well combined. Your delicious Naengi Doenjangguk is ready to enjoy!
