  • 1 packet of Soon-Hoochoo Ramen
  • 1 fresh egg
  • A generous amount of clean chive ends
  • 1 spicy Cheongyang pepper

Cooking Instructions

Step 1

First, let’s prepare the delightful chive and egg mixture that will enhance your ramen. Crack 1 fresh egg into a bowl. Add the clean, chopped chive ends. Using a fork or chopsticks, beat the egg until the yolk and white are well combined, and the chives are evenly distributed. Set this chive-egg mixture aside.

Step 2

Now, let’s get the water ready for the ramen. Pour 550ml of fresh water into a pot and bring it to a rolling boil over high heat. You can also refer to the water amount specified on the ramen packet for accuracy.

Step 3

Once the water is boiling, add the Soon-Hoochoo Ramen packet and its soup base. We’ll also add the dried green onion flakes from the post-cooking seasoning packet to enhance the flavor. Stir gently to dissolve the soup base in the water.

Step 4

Next, prepare the Cheongyang pepper for a touch of spiciness. Remove the stem from 1 Cheongyang pepper, wash it thoroughly under running water, and then thinly slice it into small pieces. Drop these into the pot. Feel free to add more if you enjoy a spicier kick.

Step 5

When the ramen starts to boil, gently loosen the noodles with your chopsticks. Once the noodles are partially cooked, carefully remove only the noodles from the pot and set them aside in a separate bowl. This is so we can properly incorporate the egg mixture later. Try not to let the broth boil down too much while the noodles are out.

Now it’s time to add the star ingredient – the chive-egg mixture. While the broth is still hot in the pot, slowly pour the prepared chive-egg mixture along the sides of the pot, creating a circular motion. This technique ensures the egg cooks into delicate ribbons rather than clumping together.

Step 7

Crucially, do not stir after adding the egg mixture! The egg will begin to set along the edges of the pot, forming a soft, web-like layer. Once the egg mixture comes to a gentle boil, immediately turn off the heat. Overcooking can make the egg rubbery.

Place the noodles, which you set aside earlier, neatly into your serving bowl. Then, ladle the warm broth, infused with chives and egg, over the noodles. Gently pour the broth to coat the noodles, as if tucking them under a soft chive-egg blanket.

Finally, sprinkle the remaining post-cooking seasoning from the Soon-Hoochoo Ramen packet all over the noodles. The peppery aroma will spread throughout the ramen, making it even more delicious.
