This simple chive egg soup, made with an abundance of tender spring chives, is bursting with a refreshing aroma, making it a perfect light soup for breakfast. Ingredients

  • Fresh chives: 2 cups (packed into a 200ml measuring cup)
  • Eggs: 3 large
  • A pinch of black pepper
  • Anchovy and kelp broth: 5 cups (approx. 1 liter)
  • Salted fermented shrimp (Saewoojeot): 1 Tbsp
  • Onion: 1/4 medium

Cooking Instructions

Step 1

Prepare the fresh chives. If you’ve harvested them from a garden, remove any yellowing leaves. Then, rinse them thoroughly several times under running water until clean.

Drain the washed chives well in a colander. Properly draining them will prevent the broth from becoming cloudy.

Once drained, cut the chives into short pieces, about 2-3 cm in length. This makes them easier to eat.

Measure out 2 cups of the cut chives, pressing them gently into a 200ml measuring cup.

In a bowl, crack the 3 eggs. Add a pinch of black pepper and beat them thoroughly to create an egg mixture.

In a pot, add the thinly sliced 1/4 onion and 5 cups of anchovy and kelp broth.

Add 1 Tbsp of salted fermented shrimp (Saewoojeot) for seasoning and bring the pot to a boil over the stove. Saewoojeot adds a wonderful depth of flavor.

Once the broth is at a rolling boil, slowly pour the prepared egg mixture into the pot along the edges. Reduce the heat to medium at this point.

As the egg begins to set, gently stir with chopsticks or a ladle to ensure the egg doesn’t clump together and is evenly distributed throughout the soup. Avoid stirring too vigorously.

When the soup comes to a boil again, lower the heat to low.

Finally, add the prepared chives and stir gently just until they wilt slightly. This quick cooking preserves their crisp texture and fresh aroma. Be careful not to overcook the chives, as they can lose their vibrancy.
