Chive Egg Pancake Ingredients- Fresh chives 80g (washed clean)
- Frozen mixed seafood 100g (thawed before use)
- Fresh eggs 3 large
- Onion 1/2 (finely chopped)
- Korean green chili pepper 1 (for a touch of spice, remove seeds and chop finely if desired)
- Red chili pepper 1/2 (for color and mild sweetness, finely chopped)
- Salt 1/2 teaspoon (to taste)
- Cooking wine (Mirin or similar) 1 teaspoon (to eliminate seafood odor and enhance flavor)
- Cooking oil (for greasing the pan)
- Black pepper (a pinch, for extra flavor)
Cooking Instructions
Step 1
Thoroughly wash all vegetable ingredients under running water. Chop the onion and chives into approximately 1cm pieces. Finely mince the green and red chili peppers, removing seeds if you prefer less heat or for a milder taste.
Step 2
Thaw the frozen mixed seafood completely by soaking it in cold water. Rinse it several times under running water to remove any impurities. Drain well in a colander, then finely chop the seafood into bite-sized pieces. Chopping the seafood small ensures it cooks evenly and quickly.
Step 3
In a large bowl, crack the 3 fresh eggs and whisk them thoroughly. Add 1/2 teaspoon of salt, 1 teaspoon of cooking wine, and a pinch of black pepper. Mix well to combine. This mixture helps eliminate any fishy odors and adds a clean taste. Add the prepared chopped seafood to the egg mixture and stir until well combined.
Step 4
Add all the chopped vegetables (onion, chives, green chili, red chili) to the bowl containing the egg and seafood mixture. Use a spatula or spoon to gently mix everything together, ensuring all ingredients are evenly coated with the egg batter. Avoid overmixing to keep the vegetables fresh and crisp.
Step 5
Heat a lightly oiled pan over medium heat. Spoon the batter onto the hot pan, forming round pancakes of your desired size. Aim for a relatively thin layer so that the pancake cooks through evenly.
Step 6
Once the bottom is golden brown and set, carefully flip the pancake using a spatula. Cook the other side until it is also golden brown and thoroughly cooked. Cooking over medium heat prevents burning and ensures a tender interior.
Step 7
Your delicious ‘Chive Seafood Egg Pancake’ is ready! It’s wonderfully flavorful without needing any flour or batter mix, thanks to the fresh chives, eggs, and savory seafood. Serve immediately while warm. You can enjoy it with a side of soy sauce dipping sauce or ketchup according to your preference.
