I often make Chamnamul because I fall in love with its delightful aroma. This recipe introduces a Chamnamul salad that is simple yet deeply flavorful, utilizing fresh Chamnamul. It’s great as a side dish for rice or as a fantastic ingredient for bibimbap.

  • 1 Tbsp minced garlic
  • 1 Tbsp tuna extract (or soy sauce for soup)
  • Pinch of salt (adjust to taste)
  • 2 Tbsp sesame oil
  • Pinch of sesame seeds

Cooking Instructions

First, let’s prepare the Chamnamul. Trim off any tough, fibrous parts of the stems by snapping them off. Also, carefully remove any wilted, bruised, or damaged leaves, ensuring you only use fresh and good-quality parts. This preparation ensures a pleasant texture and a clean taste when the salad is mixed.

Now, we’ll briefly blanch the Chamnamul. Bring a pot of water to a boil, and add 1 tablespoon of salt. Adding salt helps to brighten the Chamnamul’s color and also acts as a sterilizer. Add the prepared Chamnamul and blanch for about 20-30 seconds, just until it slightly wilts. Be careful not to over-blanch, as it can become mushy and lose its texture.

Immediately after blanching, drain the Chamnamul and rinse it thoroughly under cold running water to cool it down. This step is crucial for maintaining its crisp texture. Squeeze out as much water as possible, then cut it into bite-sized pieces, about 5cm (2 inches) long. Cutting it into slightly longer pieces will make the salad look more appealing when mixed.

Alright, it’s time to season this delicious Chamnamul! Place the prepared Chamnamul in a bowl. Add 1 tablespoon of minced garlic, 1 tablespoon of tuna extract (or soy sauce for soup), a pinch of salt (adjust to your preference), 2 tablespoons of sesame oil, and a pinch of sesame seeds. Gently mix everything together with your hands, ensuring the seasoning coats the Chamnamul evenly. Mix softly; over-mixing can release a raw taste.
