This delightful dish features rice cooked with fresh squid, topped with a savory sauce that you can mix in. The fragrant aroma of butter and subtle scent of green onions enhance its delightful taste. Ingredients- 1 Squid (cleaned)
- 200g Rice
- 200ml Water
- 10 stalks Green onions
- 30g Butter
Seasoning Sauce- 2 Tbsp Soy sauce
- 1 Tbsp Oligosaccharide (or honey)
- 0.5 Tbsp Minced garlic
- 1 Tbsp Sesame oil
- 1 Tbsp Toasted sesame seeds
- 2 Tbsp Soy sauce

Cooking Instructions
Step 1
First, rinse the 200g of rice (about 1.5 cups) under cold water until the water runs clear. Drain the rice in a sieve and let it soak for 30 minutes. This soaking process helps the rice cook more evenly and results in a fluffier texture.

Step 2
While the rice is soaking, prepare the squid. Finely chop the squid tentacles into bite-sized pieces (about 1-2 cm). For the squid body, make cuts about 3-4 cm long on each side, starting from the center. This helps it cook evenly and makes for a pleasant texture.

Step 3
Let’s make the delicious seasoning sauce to go with the squid rice! In a small bowl, combine 2 Tbsp soy sauce, 1 Tbsp oligosaccharide (adjust sweetness to your liking), 0.5 Tbsp minced garlic, 1 Tbsp sesame oil for that nutty aroma, and 1 Tbsp toasted sesame seeds. Mix everything thoroughly with a spoon. Set aside for the flavors to meld.

Step 4
Finely chop the 10 stalks of green onions. Make sure to wash them and pat them dry before chopping into about 2-3 cm lengths. These will be sprinkled on top for a fresh garnish and added flavor.

Now, let’s start cooking the rice. Add 30g of butter to a pot or a small saucepan over medium-low heat. Once the butter begins to melt, add the chopped squid tentacles and sauté until they turn opaque. This step brings out the squid’s natural flavor. Be careful not to overcook them at this stage.

Once the squid tentacles are cooked and have turned white, add the soaked 200g of rice to the pot. Stir gently with a spatula for about 2 minutes, ensuring the rice grains are coated with the butter and squid essence without breaking them. Stir-frying the rice helps it absorb all the flavors.

Pour 200ml of water over the sautéed rice and squid. Bring the water to a gentle boil. Once boiling, arrange the prepared squid body pieces on top of the rice. Cover the pot with a lid, reduce the heat to low, and let it simmer for 10 minutes. Cooking on low heat ensures the rice cooks through evenly.

Step 8
After 10 minutes of simmering, turn off the heat completely. Keep the lid on and let the rice steam for another 10 minutes. This resting period allows the steam to distribute evenly, ensuring every grain of rice is perfectly cooked and tender.
