Main Ingredients
  • 1 Deodeok root (approx. 50-70g), prepared
  • 1 cup (200ml) Fresh milk
  • 1 Tbsp Honey (adjust to taste)

Cooking Instructions

Step 1

First, we’ll lightly blanch the deodeok to soften its slightly bitter taste. Place the deodeok in boiling water and blanch for about 1 minute. This process makes the deodeok much softer, easier to blend, removes any earthy smell, and results in a more delicious juice.

Step 2

Rinse the blanched deodeok under cold water and let it cool slightly. Then, trim off the hard ends of the deodeok. These parts might not have the best texture or aroma, so it’s best to remove them.

Step 3

Now it’s time to peel the deodeok. Make a deep vertical slit down the center of the deodeok with a knife. Then, gently scrape off the peel by turning the deodeok and running the knife along its body. Using a dull knife or a spoon can also help with this process, making for a clean peel.

Step 4

Once peeled, cut the deodeok into appropriate sizes so it’s easy to blend in a mixer. Cutting it into 2-3cm pieces is recommended to avoid straining the blender.

Step 5

Place the prepared deodeok pieces into the blender along with 1 cup of fresh milk and 1 tablespoon of honey for sweetness. You can adjust the amount of honey based on the deodeok’s bitterness or your personal preference. If you like it sweeter, feel free to add a little more.

Step 6

Secure the lid of the blender and blend until all ingredients are smooth and well combined. Using a high-speed blender will yield a creamier and finer texture. Once blended to a smooth consistency with no lumps, your nutrient-packed deodeok juice is ready! It’s especially delicious when served chilled.
