Main Ingredients

  • 1 handful of fresh abalone mushrooms (cleaned and trimmed)
  • 1/2 block of firm tofu
  • 1/2 stalk of green onion
  • 2 tablespoons of soybean paste
  • 1/2 tablespoon of minced garlic
  • Anchovy broth (or anchovy-kelp broth)

Optional Ingredients (for a spicy kick)

  • 1/2 Cheongyang pepper (seeds removed and finely chopped, or thinly sliced)
  • 1/2 teaspoon red pepper flakes

First, prepare a flavorful anchovy broth. If you have dried kelp, adding it along with the anchovies will create an even richer flavor, but anchovies alone will also yield a delicious broth. Simmer for about 10 minutes to extract a rich umami base.

While the broth is simmering, prepare your other ingredients. Rinse the abalone mushrooms thoroughly under running water to remove any soil. If there’s any stubborn dirt on the roots, gently scrape the surface with a knife. Chop the mushrooms into bite-sized pieces. Thinly slice the green onion and cut the tofu into cubes.

Once the broth is ready, remove the anchovies (and kelp). Stir in the soybean paste and minced garlic, then bring to a rolling boil. Since the saltiness and flavor of soybean paste can vary between brands and households, it’s best to start with 2 tablespoons and taste as you go. Add more soybean paste if needed to adjust the seasoning to your preference.

When the broth comes to a boil again, add the prepared abalone mushrooms. Let them simmer together for about 3-5 minutes, allowing their fragrant aroma to infuse the soup. Be careful not to overcook, as the mushrooms can become too soft.

Finally, add the sliced green onions and tofu, and let it simmer briefly. If you prefer a spicier stew, this is the time to add the red pepper flakes and finely chopped Cheongyang pepper.
