Main Ingredients
- 1/2 bunch nutritious chives (approx. 50g)
- 3 apple jujubes
- 1/2 medium onion (approx. 50g)
- A handful of pine nuts (for garnish)
- A sprinkle of sesame seeds (for garnish)
- 1/2 Tbsp sesame oil (for coating vegetables)
Sweet & Tangy Dressing
- 1 Tbsp soy sauce (15ml)
- 1 Tbsp fish sauce (15ml)
- 2 tsp gochugaru (Korean chili flakes) (10g)
- 2 tsp chopped green onion (10g)
- 1 tsp minced garlic (5g)
- 1 Tbsp rice vinegar (15ml)
- 1 Tbsp cooking wine (mirin) (15ml)
- 2 tsp sugar (10g)
- 1/2 Tbsp sesame oil (7.5ml)
- A sprinkle of sesame seeds (for garnish)
- 1 Tbsp soy sauce (15ml)
- 1 Tbsp fish sauce (15ml)
- 2 tsp gochugaru (Korean chili flakes) (10g)
- 2 tsp chopped green onion (10g)
- 1 tsp minced garlic (5g)
- 1 Tbsp rice vinegar (15ml)
- 1 Tbsp cooking wine (mirin) (15ml)

- 1/2 Tbsp sesame oil (7.5ml)

Cooking Instructions
Step 1
First, wash the apple jujubes thoroughly. Carefully make 2-3 thin slits along the sides, reaching towards the core, to remove the seeds. Then, thinly slice them. This technique helps the dressing penetrate better and makes them easier to eat.
Step 2
Trim and cut the nutritious chives into segments about 5-6 cm long. Thinly slice the onion into half-moons.
Step 3
Remove the caps from the pine nuts. Place them on a paper towel to absorb excess moisture, then finely chop them to create pine nut powder. This will add a wonderful nutty flavor.

Prepare the dressing by combining all the dressing ingredients in a bowl. Whisk together the soy sauce, fish sauce, gochugaru, chopped green onion, minced garlic, rice vinegar, cooking wine, sugar, sesame oil, and sesame seeds. Stir well until the sugar is dissolved.

To maintain the crispness of the vegetables and prevent them from becoming soggy, gently toss the prepared chives and onions with 1/2 Tbsp of sesame oil before adding the dressing. This creates a light coating that helps preserve their freshness.

Pour the prepared dressing over the lightly coated vegetables. Gently mix everything together, folding rather than aggressively tossing, to ensure the dressing is evenly distributed without bruising the chives.

Finally, sprinkle generously with sesame seeds for added flavor and visual appeal. Your delicious salad is now ready to be served!
