  • 4 medium apples (sweet varieties like Fuji or Gala are recommended)
  • 20g fresh ginger (peeled and thinly sliced)
  • 1 cinnamon stick
  • 4 Tbsp granulated sugar (adjust to taste)
  • 2 cups water (approx. 400ml)
  • 1/2 cup heavy cream (approx. 120ml)
  • 3/4 cup milk (approx. 180ml)
  • 1 tsp fresh lemon juice
  • Pinch of salt
  • Pinch of dried parsley for garnish

Cooking Instructions

Step 1

First, wash the apples, then peel, core, and thinly slice them. Peel the fresh ginger and slice it thinly into rounds. In a pot, combine the sliced apples, ginger slices, cinnamon stick, 4 tablespoons of sugar, and 2 cups of water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to medium-low and simmer for about 10 minutes until the apples are tender.

After 10 minutes, remove the cinnamon stick and ginger slices from the pot. Their flavors should have beautifully infused the liquid. Now, pour in 3/4 cup of milk and 1/2 cup of heavy cream. Gently stir and bring the soup back to a low simmer over low heat. Be careful not to let it boil vigorously, and stir occasionally to prevent the cream from separating.

Check if the apples are very soft, easily pierced with a fork. Season the soup with a pinch of salt. Start with a small amount and taste, adding more if needed. Be cautious not to oversalt.

Now it’s time to blend the soup until smooth. Carefully transfer the cooked apple mixture to a blender, or use an immersion blender directly in the pot. Blend for about 1 minute, or until you achieve your desired creamy consistency. Ensure there are no lumps for a silky texture.
