  • 2 Tbsp chopped green onion
  • 2 Korean chili peppers (Cheongyang)
  • 1/2 Tbsp minced garlic
  • 1 Tbsp ground sesame seeds
  • 1 Tbsp sesame oil
  • 1 Tbsp red pepper flakes (Gochugaru)
  • 1 Tbsp soy sauce
  • 1.5 Tbsp oligosaccharide (or corn syrup)
  • 1 Tbsp mirin (rice wine)

1. The first step to a delicious anchovy salad is choosing the right anchovies. Prepare 100g of medium-sized dried anchovies, specifically the ‘Gai-ri’ type. These are ideal as they have fewer fine bones and plumper flesh, making them perfect for this dish.

2. Let’s enhance the nuttiness of the anchovies! Place the dried anchovies in a dry pan over low heat. Gently toast them for about 3 minutes, or until you can smell their rich, savory aroma. Be careful not to burn them; slow toasting is key for that delightful fragrance.

3. After toasting, place the anchovies in a sieve and gently shake them. This will remove any excess anchovy powder or small fragments, ensuring a cleaner texture in your final dish.
