Anchovy Fried Rice
Super Simple Fried Rice Using Leftover Anchovies and Vegetables
A quick and easy fried rice made with leftover vegetables and stir-fried anchovies from the fridge. It’s a great way to clear out your fridge and make a delicious meal!
Ingredients
- 1/4 head Broccoli
- 1/4 Onion
- A little Carrot
- A little Green Onion (leaf part)
- 2 Tbsp Stir-fried Anchovies (store-bought or homemade)
- 2 servings Rice (cold rice is recommended)
Cooking Instructions
Step 1
First, wash and prepare the vegetables for the fried rice. Finely dice the broccoli, onion, and carrot into pieces about 0.5 cm thick. Finely chop the green onion. Cutting the vegetables into slightly larger pieces will help maintain a pleasant texture after stir-frying.
Step 2
Heat 2 tablespoons of cooking oil in a heated pan. Add all the prepared vegetables and stir-fry over high heat. Cook until the vegetables are slightly softened and translucent. Feel free to use any leftover vegetables you have in your refrigerator.
Step 3
Once the vegetables are partially cooked, add 2 tablespoons of the pre-made stir-fried anchovies and stir-fry together. Continue to cook for about 1-2 minutes, allowing the savory flavor and sweet-salty seasoning of the anchovies to meld with the vegetables. Stir gently to avoid breaking up the anchovies too much.
Step 4
When the vegetables and anchovies are well combined, add 2 servings of rice. Use a spatula to break up the rice and stir-fry evenly. It’s important to ensure the rice grains are separated and not clumped together. If you find the seasoning lacking, you can add a little oyster sauce or soy sauce to your preference.
