Anchovy and Nut Gimbap: A Perfect Harmony of Rice and Stir-fried Anchovies
Nutritious and Easy-to-Make Anchovy and Nut Gimbap Recipe
Introducing a special square gimbap featuring a delightful combination of crispy anchovies, savory nuts, and fresh vegetables. It’s perfect as a snack for kids or for special occasion lunchboxes.
Main Ingredients- 2 sheets of dried seaweed (gim)
- 1 bowl of warm cooked rice
- 2 eggs
- 2 fresh lettuce leaves
- 1 red bell pepper
- 2 slices of processed cheese
Cooking Instructions
Step 1
First, let’s make the delicious stir-fried anchovies with nuts. Heat 1 Tbsp of cooking oil in a pan over medium-low heat. Add 40g of stir-fry anchovies and toast until lightly golden. This will remove any fishy smell and bring out a savory aroma.
Step 2
Once the anchovies are toasted, add 28 macadamia nuts and stir-fry them together. Be careful not to burn the nuts by managing the heat.
Step 3
Finally, add 1 tsp of black sesame seeds and 1 Tbsp of honey, and stir-fry quickly. Mix well to coat the ingredients with honey. Your delicious stir-fried anchovy and nut mixture is ready! This can also be enjoyed as a side dish.

Add 1 bowl of warm cooked rice to the well-stir-fried anchovy and nut mixture and mix thoroughly. Each grain of rice will absorb the flavors of the anchovies and nuts, creating a tasty anchovy fried rice. This alone makes for a wonderful meal.

Now, let’s prepare for making the gimbap. Wash the red bell pepper (1) thoroughly, remove the stem, cut it in half, remove the seeds, and then dice it into bite-sized cubes. The colors are so vibrant!

On a cutting board or large plate for rolling the gimbap, lay down plastic wrap (like Magic Wrap). Place the 2 sheets of seaweed (gim) on top, without overlapping. Arrange the 2 slices of processed cheese diagonally across the seaweed. The cheese will help hold the inner ingredients together.

Spread about 1/4 of the prepared anchovy fried rice (approximately half a bowl) thinly over the cheese. Be careful not to make it too thick, as the gimbap might break.

Place one fried egg on top of the anchovy fried rice. You can prepare it sunny-side up or fully cooked, according to your preference.

Arrange the diced red bell pepper neatly on top of the fried egg. The colorful vegetables will make the gimbap look even more appetizing.

On top of the bell pepper, place 2 lettuce leaves, folded in half. The crispiness of the lettuce will cut through any richness.

Finally, spread the remaining 1/4 of the anchovy fried rice thinly over the lettuce. This will fill out the gimbap generously.

Using the plastic wrap, roll the gimbap tightly. You can lightly moisten the edge of the seaweed with water to help it seal. Re-wrap it securely with the plastic wrap to ensure it doesn’t unravel.

Cut the completed gimbap in half into bite-sized pieces (about 2-3 cm thick) to reveal the delicious layers of your anchovy and nut gimbap. The generous filling makes it look incredibly appealing!
