Scone Ingredients

  • 1.5 paper cups almond flour
  • 1/3 paper cup milk
  • 1 tablespoon cooking oil
  • 1 tablespoon oligosaccharide (or honey/maple syrup)
  • 1 teaspoon baking powder

Cooking Instructions

Step 1

In a large mixing bowl, combine 1.5 paper cups of almond flour, 1/3 paper cup of milk, 1 tablespoon of cooking oil, 1 tablespoon of oligosaccharide, and 1 teaspoon of baking powder.

Step 1

Step 2

Gently mix the ingredients in the bowl with a spatula or fork until just combined. Once the dry ingredients are incorporated, put on a pair of clean disposable gloves and lightly bring the dough together into a cohesive ball. Avoid overworking the dough, as this can make the scones tough.

Step 2

Step 3

Now it’s time to shape the scones. Take portions of the dough, about the size of a large egg yolk, and roll them into balls. Gently flatten them with your palm to create your desired scone shape. You can make them round, triangular, or any shape you prefer!

Step 3

Step 4

Line a baking sheet with parchment paper. Place the shaped scone dough onto the prepared baking sheet, leaving some space between each scone as they will puff up slightly during baking.

Step 4

Step 5

Bake in a preheated oven at 180°C (350°F) for a total of 12 minutes. Since oven heat can sometimes be stronger from the top, after about 8 minutes, carefully remove the scones from the oven and flip them over. Return them to the oven and bake for the remaining 4 minutes. This ensures they are evenly golden brown on both sides. (For Air Fryer users: Bake at 180°C / 350°F for 10 minutes on the top side, then flip and bake for another 10 minutes on the bottom side.)

Step 5

Step 6

Ta-da! Here are the freshly baked scones, just out of the oven. Look at that beautiful golden color – they turned out perfectly! The aroma of warm scones is truly inviting.

Step 6

Step 7

I couldn’t resist breaking one open while it was still warm. You can see the lovely texture: a slight crispness on the outside, and a wonderfully moist and tender crumb inside. They are not hard or crumbly at all, offering a delightful bite.

Step 7

Step 8

These scones are perfect served with a warm cup of black coffee. Just like KFC biscuits are delicious with jam, these scones pair beautifully with a drizzle of honey. The mild, nutty flavor of the almond scones is wonderfully complemented by the natural sweetness of honey.
