Ingredients
  • 3 medium-sized sweet potatoes
  • 15g butter (softened at room temperature)
  • 3 sprigs fresh rosemary (or 1/2 tsp dried rosemary)
  • 60g mozzarella cheese (shredded)

Cooking Instructions

Step 1

Thoroughly wash the sweet potatoes, ensuring all dirt and debris are removed. Since we’re cooking them with the skin on, pay extra attention to cleaning. You can use a damp cloth to scrub them for a deeper clean.

Step 2

Place the washed sweet potatoes in the air fryer basket and bake at 180°C (356°F) for approximately 30 minutes. The cooking time may vary depending on the size of the sweet potatoes. Pierce them with a fork or skewer; they are done when tender. (Flipping them halfway through will ensure more even cooking.)

Step 3

Once the sweet potatoes are well-cooked, carefully remove them from the air fryer. While they are still warm, use a knife to make a lengthwise cut down the center of each sweet potato. Don’t cut all the way through; make a slit that allows the potato to open slightly.

Step 4

Gently spread the softened butter into the slit you made in each sweet potato. The butter will melt and meld with the natural sweetness of the potato, enhancing its flavor.

Step 5
