It will be golden brown and crispy on the outside, while remaining incredibly tender and moist on the inside. This is perfect for holidays, special occasions, or a delightful weekend treat!

First, prepare about 1kg of whole pork belly. This is a crucial step for flavorful sui-yuk. Score the pork belly by making shallow cuts across the skin and fat layer. Aim for cuts about 0.5cm apart. Scoring helps to tenderize the meat, allows the flavors to penetrate better, and prevents the juices from escaping during cooking. If you are using pork belly without the skin, you can skip this scoring step.

Line your air fryer basket with parchment paper. This makes cleanup significantly easier later on. Place the scored pork belly onto the parchment paper. Generously season the entire surface of the pork belly with herb salt for initial flavoring. If you don’t have herb salt, you can use a mix of regular salt, black pepper, and your favorite dried herbs like rosemary or thyme. Be sure to distribute the seasoning evenly across the meat.

Preheat your air fryer to 180°C (350°F). Place the seasoned pork belly in the basket and air fry for 10 minutes. After 10 minutes, carefully remove the pork belly and flip it over. Flipping it ensures that the rendered fat drains away effectively. Return it to the air fryer and continue to cook at 180°C (350°F) for another 10 minutes. This completes the cooking process, resulting in a beautifully browned and cooked sui-yuk bossam. The total cooking time is about 20 minutes, but you may need to adjust it slightly depending on the thickness of your pork belly and the specific model of your air fryer. It’s always a good idea to check on the meat’s doneness during cooking.
