Main Ingredients- 300g aged pumpkin (weight after removing skin and seeds)
- 1 pinch of salt (for wilting the pumpkin)
Cooking Instructions
Step 1
First, remove the skin and seeds from the aged pumpkin, then wash it thoroughly. Slice the prepared pumpkin thinly into strips about 0.5cm thick. If sliced too thick, the seasoning won’t penetrate well, and if too thin, the texture might become mushy, so cutting to an appropriate thickness is important.
Step 2
Place the sliced pumpkin in a bowl and add 1 pinch of salt. Toss to coat evenly and let it sit for about 10 minutes to wilt. Salting will draw out moisture from the pumpkin, helping to preserve its crisp texture.
Step 3
While the pumpkin is wilting, let’s make the seasoning. In a separate bowl, combine 1 Tbsp minced garlic, 2 Tbsp red pepper flakes, 2 Tbsp sugar, and 1 Tbsp fish sauce. Mix well. You can use soy sauce or soup soy sauce instead of fish sauce, but fish sauce adds a richer umami flavor.
Step 4
After 10 minutes, gently squeeze out the excess water from the wilted pumpkin and discard it. Be careful not to squeeze too hard, as this could mash the pumpkin. Now, add the drained pumpkin to the seasoning mixture and gently toss to coat everything evenly. Your delicious aged pumpkin salad is ready!
