Noodle Ingredients

  • 1 serving of somyeon (thin wheat noodles, approx. 100g)
  • 2 leaves of aged kimchi
  • A small piece of zucchini (about 1/4)
  • A small piece of carrot (about 1/4)
  • A small piece of onion (about 1/4)
  • A little bit of green onion
  • Shredded seaweed (for garnish)
  • Sesame seeds (for garnish)

Aged Kimchi Seasoning & Vegetable Stir-fry

  • Aged kimchi juice (optional, 1-2 Tbsp)
  • 1/2 tsp sugar
  • 1 Tbsp perilla oil (or sesame oil)

Cooking Instructions

First, prepare the vegetables for garnish. Julienne the zucchini, carrot, and onion thinly. Finely chop the green onion.

Heat 1 Tbsp of perilla oil in a pan over medium heat. Add the julienned zucchini, carrot, and onion, along with a pinch of salt. Stir-fry until the vegetables are slightly softened but still have a bit of a bite. For the aged kimchi, remove the excess brine, rinse it lightly under running water to reduce saltiness, and then soak it in water for about 30 minutes to mellow its sourness. Squeeze out the excess water thoroughly and cut the kimchi into bite-sized pieces (about 1cm wide strips). Add the cut kimchi to the pan, along with 1/2 tsp sugar and 1 Tbsp perilla oil. Stir-fry until the kimchi is tender and slightly caramelized. This combination of tangy kimchi and sweet sugar creates a wonderful depth of flavor.

Bring a large pot of water to a rolling boil. Add the somyeon noodles and cook according to the package instructions (usually around 4 minutes). Once cooked, immediately drain the noodles and rinse them thoroughly under cold running water to remove excess starch. This step ensures the noodles are firm and don’t clump together. Drain them well in a colander.

Place the drained somyeon noodles into a large mixing bowl. Arrange the stir-fried vegetables and the sautéed aged kimchi attractively on top of the noodles.

Now, let’s prepare the sauce. In a small bowl, combine 1 Tbsp soy sauce, 1-2 Tbsp perilla oil, 1/2 tsp sugar, 1 Tbsp ground sesame seeds, and 1/2 tsp minced garlic. (For an extra layer of savory flavor, you can add 1-2 Tbsp of the aged kimchi brine to the sauce.)

Gently toss the noodles and all the ingredients with the sauce until evenly coated. Be careful not to break the noodles. Garnish with shredded seaweed and sesame seeds.
