Main Ingredients

  • Pork ribs 1 portion (approx. 600g)
  • Aged kimchi 1/2 head
  • JungFood Rich Soy Bean Drink 600g

Seasoning Ingredients

  • Doenjang (Korean soybean paste) 1 Tbsp
  • Gochugaru (Korean chili powder) 3 Tbsp
  • Minced garlic 2 Tbsp
  • Guk-ganjang (soup soy sauce) 4 Tbsp
  • Maesil-cheong (plum syrup) 2 Tbsp
  • Mulyeot (corn syrup) 2 Tbsp
  • Saewujeot (salted shrimp) 1/2 Tbsp (including brine)
  • Black pepper powder, a pinch
  • Sesame oil 1 Tbsp

Cooking Instructions

Step 1

First, prepare JungFood’s rich soy bean drink, the key ingredient for this recipe. If you don’t have soy bean drink, you can substitute it with unsweetened soymilk of a similar consistency.

Step 1

Step 2

Prepare the aged kimchi without draining its juice. Soak the pork ribs in cold water or milk for about 30 minutes to remove any blood. Soaking helps to eliminate any gamey smell and ensures a clean flavor.

Step 2

Step 3

In a large bowl, combine all the seasoning ingredients: doenjang, gochugaru, minced garlic, soy sauce, plum syrup, corn syrup, salted shrimp (with brine), black pepper, and sesame oil. Mix well until all ingredients are evenly combined and there are no lumps, creating a smooth seasoning paste.

Step 3

Step 4

All ingredients are now ready! You have the blood-rinsed pork ribs, the aged kimchi, and the secret ingredient, the soy bean drink. Everything is set to start cooking.

Step 4

Step 5

In a deep wok or a large pot, add the prepared pork ribs, aged kimchi, and the mixed seasoning paste. Toss everything together to coat the ingredients evenly with the seasoning. Ensuring an even coating is crucial for flavor.

Step 5

Step 6

Pour the prepared soy bean drink into the pot with the coated ingredients. Bring to a boil over high heat, then reduce the heat to low, cover the pot, and let it simmer gently for about 40 to 50 minutes. Stir occasionally to prevent sticking as the sauce thickens. Once the pork ribs are tender and the sauce has thickened and is well-infused, your delicious Aged Kimchi Pork Rib Stew is ready! It’s perfect as a side dish with rice or as a hearty appetizer.
