Adorable Heart-Shaped Rolled Omelet (Tamagoyaki)

Ingredients- 4 large eggs
- 2 Tbsp finely chopped green onion
- 1/2 imitation crab stick, shredded (or a little shredded carrot)
- Cooking oil, as needed
- 1 pinch of salt
Cooking Instructions
Step 1
In a bowl, crack 4 large eggs. Add a pinch of salt and 2 tablespoons of finely chopped green onion. Whisk everything together gently until well combined and no streaks of egg white remain. Ensure the mixture is smooth.
Step 2
Shred the imitation crab stick into thin strips, using the red part for color. (Optional: If using carrot, peel it, julienne it very finely, then lightly sauté in a lightly oiled pan until just tender. This adds a softer texture and brighter color.)

Heat a non-stick pan over low heat and add a small amount of cooking oil. Wipe the pan with a paper towel to create a thin, even coating. Pour about half of the egg mixture into the pan and spread it thinly. Once the egg is about 70% cooked (the edges are set but the center is still a bit runny), lay the shredded crab stick or sautéed carrot strips lengthwise in the center of the egg. Carefully roll the cooked egg from the bottom edge upwards, enclosing the filling.
Step 4
Slide the rolled portion to one side of the pan. Pour the remaining egg mixture into the empty space. Let the new egg mixture cook slightly around the existing roll. Once the bottom is mostly set, lift the existing roll and roll it over the new egg mixture, enclosing it completely. Repeat this process, adding the remaining egg mixture in stages and rolling until all the egg is used.
Step 5
Using a spatula, gently press down on the omelet to shape it and ensure it’s cooked through. Flip the omelet occasionally to cook evenly on all sides. Be careful not to use high heat, as this can burn the outside before the inside is cooked.

To achieve a neat rectangular shape, gently press and shape the omelet against the sides of the pan as you roll it. Flattening each side with the spatula while cooking helps maintain the shape and prevents the filling from spilling out when sliced.

Once shaped into a rectangle, remove the omelet from the pan and let it cool slightly. Slicing it while hot can cause it to fall apart, so allowing it to cool for a few minutes will help it hold its shape better.

Slice the cooled omelet into thick pieces, about 1.5 to 2 cm (approx. 3/4 inch) thick. For the heart shape, slice these thick pieces diagonally.
Step 9
Take the diagonally sliced pieces. For each pair that will form a heart, take the piece on the right and flip it 180 degrees. When you place the left piece next to the flipped right piece, they will naturally form a beautiful heart shape. It’s quite magical!
