Main Ingredients
  • 2 handfuls of commercially sold dried radish strips
  • 3 sheets of square fish cakes
  • 1.5 bowls of cooked rice

Cooking Instructions

Step 1

First, prepare about 2 handfuls of dried radish strips. Rinse them thoroughly under running water about 3 times, then soak them in water for 20 minutes. Changing the water a few times during soaking will yield better results.

Step 2

To soften the fish cakes, briefly blanch them in hot water. Drain them well, then thinly slice them into strips, similar in length to the radish strips.

Step 3

Now, let’s make the seasoning for the radish salad! In a bowl, combine 1.5 Tbsp red pepper flakes, 1 Tbsp sugar, 2 Tbsp soy sauce, 1 Tbsp corn syrup, 1 Tbsp minced garlic, and 1 Tbsp water. Mix well to create the seasoning paste. Squeeze out excess water from the soaked radish strips and add them along with the sliced fish cakes to the bowl. Mix vigorously with your hands until everything is well coated and seasoned. Finish with a drizzle of sesame oil and a sprinkle of sesame seeds for added fragrance and flavor. This radish salad is delicious enough to be enjoyed as a side dish on its own!

Step 4

It’s time to assemble the gimbap. Place a sheet of seaweed (cut into 4 pieces) on your work surface, and lay another sheet of seaweed (cut into 8 pieces) on top, centered. Layering the seaweed like this will prevent the rice from making the bottom sheet soggy and tearing, allowing for a more stable roll.

Step 5

Spread a moderate amount of cooked rice evenly over the 8-cut seaweed sheet. Then, place a generous portion of the seasoned radish salad on top of the rice. Now, carefully and tightly roll the gimbap.

Step 6
