Addictively Delicious Egg & Gochujang Fried Rice

A satisfying and incredibly addictive Egg & Gochujang Fried Rice, perfect for a quick meal when you’re dining alone. Its simple preparation belies its deeply flavorful profile.
Ingredients
- 2 large eggs
- Cooking oil (a little)
- 1 Tbsp Gochujang (Korean chili paste)
- Sesame oil (a little)
- 1 bowl of cooked rice (approx. 200g)
- Flaked seaweed (Gim/Nori, to taste)
Cooking Instructions
Step 1
Heat about 1-2 tablespoons of cooking oil in a wide pan over medium heat. Crack in the 2 eggs and scramble them loosely with chopsticks or a spatula until they are just cooked but still slightly soft. Push the scrambled eggs to one side of the pan.
Step 2
Add the bowl of cooked rice to the empty side of the pan. Gently break up any clumps of rice with your spatula, ensuring the grains are separated.
Step 3
Add 1 tablespoon of Gochujang (level spoonful) onto the rice. Press down with your spatula and stir-fry to thoroughly combine the Gochujang with the rice. Keep the heat at medium-low during this step.
Step 4
Once the Gochujang is somewhat incorporated, drizzle a little sesame oil around the edges of the pan. This will add a fragrant and nutty aroma.
Step 5
Reduce the heat to low. Now, gently stir and mix all the ingredients (scrambled eggs, rice, Gochujang, and sesame oil) together as if you’re folding them. Continue to stir-fry for about 1-2 minutes, ensuring nothing sticks to the bottom, until everything is well combined and fragrant.
Step 6
Finally, transfer the fried rice to a serving bowl. Sprinkle a generous amount of flaked seaweed (Gim/Nori) over the top according to your preference. Give it a good mix and enjoy! The spicy and savory combination is incredibly addictive and will have you reaching for more.
