Addictively Delicious ‘Drug’ Marinated Eggs
An Easy Recipe for ‘Drug’ Marinated Eggs, a Simple Egg Dish
Make a generous batch of these ‘drug’ marinated eggs for a satisfying side dish. They are so delicious that you can enjoy them simply by spooning them over freshly cooked rice, without needing any other side dishes. It’s an incredibly easy side dish because you just make the sauce and pour it over boiled eggs, meaning you don’t have to stand over a hot stove, especially on warm days. Soft-boiled eggs are extra moist and flavorful, but I think hard-boiled eggs would also be delicious. They even taste great when you add leftover roasted eggs.
Ingredients- 8-10 eggs
- 3 Tbsp chopped green onions
- 3 Tbsp chopped onion
- 2 Tbsp chopped Cheongyang chili peppers (adjust to taste)
- 2 Tbsp finely chopped red bell pepper
- 2 Tbsp finely chopped yellow bell pepper
Marinade Sauce- 1/2 cup soy sauce
- 1/2 cup water
- 3 Tbsp cooking wine (like Mirin)
- 1.5 Tbsp minced garlic
- 1.5 Tbsp toasted sesame seeds
- 1/2 cup soy sauce
- 1/2 cup water

Cooking Instructions
Step 1
I used free-range eggs, which are a bit smaller, so I prepared 10. If you’re using larger eggs, prepare about 8.
Step 2
Place the eggs in a pot and add enough water to cover about 2/3 of the eggs. Add 2 tablespoons of vinegar and 1/2 tablespoon of coarse salt to the water. Adding vinegar helps the eggshells peel more easily, so be sure to include it.
Step 3
Boil with the lid open. Once bubbles start to form, continue to boil for about 6 minutes. I boiled them over high heat until it started boiling, then reduced to medium heat and boiled for about 6 minutes. I always try to cook them perfectly, but sometimes they turn out hard-boiled. This time, I succeeded!
Step 4
Peel the boiled eggs and set them aside.
Step 5
Finely chop the onion, green onions, Cheongyang peppers, and bell peppers. The amounts are based on a tablespoon, but it’s okay to use a little more or less. If you don’t like it too spicy, you can substitute the Cheongyang peppers with regular green chili peppers or omit them entirely.
Step 6
In a bowl, combine 1/2 cup soy sauce, 1/2 cup water, 3 tablespoons cooking wine, 1.5 tablespoons minced garlic, and 1.5 tablespoons toasted sesame seeds. Mix them together.
Step 7
Add the finely chopped vegetables to the sauce. It’s great to have a side dish that can be made without standing over a hot stove, especially during hot weather.
Step 8
Place the boiled and peeled eggs in a container.
Step 9
Simply pour the marinated sauce over the eggs, and your ‘drug’ marinated eggs are complete!
Step 10
It’s so convenient to make these marinated eggs! I covered the container and let them marinate in the refrigerator for about 6 hours before eating. Honestly, you could probably eat them after just a short marination time. Enjoy this incredibly easy and delicious side dish!
