  • 8 large eggs
  • 1 Tbsp coarse salt (for boiling)
  • 1 Tbsp vinegar (for boiling)

Addictive Soy Marinade
  • 1.5L Soy Sauce
  • 1.5L Water
  • 2 Cheongyang peppers, finely chopped (for a hint of spice)
  • 1 Red chili pepper, finely chopped (for color and mild heat)
  • 1/2 Onion, finely minced
  • 1 stalk Green onion, white part mainly, finely minced
  • 1 Tbsp Toasted sesame seeds (for nutty aroma)
  • 1 Tbsp Mirin (rice wine)
  • 2 Tbsp Corn syrup (for gloss and sweetness)
  • 3 Tbsp Honey (for a smooth, mellow sweetness)

Cooking Instructions

Step 1

Before boiling the eggs, let them sit at room temperature for about 30 minutes. This simple step helps prevent the eggshells from cracking while boiling, ensuring beautifully intact eggs. You can avoid the surprise of a cracked shell and achieve perfectly cooked eggs.

Step 2

Fill a pot with ample water, then add 1 tablespoon of coarse salt and 1 tablespoon of vinegar. Once the water reaches a rolling boil, gently lower the eggs into the pot. To prevent them from sticking to the bottom, stir them gently in one direction for exactly 6 minutes. This duration will result in perfect soft-boiled eggs.

Step 3

Immediately transfer the boiled eggs to an ice bath. This rapid cooling stops the cooking process and makes peeling the shells much easier. Soft-boiled eggs have delicate shells, so handle them with care. Slowly peel them while they are still cool to reveal the tender whites and luscious yolks.

Step 4

While the eggs are boiling, prepare the addictive soy marinade. Finely mince the onion. Chop the Cheongyang and red chili peppers into small rounds. Finely mince the white parts of the green onion. In a bowl, combine 1.5L of soy sauce, 1.5L of water, the minced onion, chopped chilies, minced green onion, toasted sesame seeds, 1 tablespoon of mirin, 2 tablespoons of corn syrup, and 3 tablespoons of honey. Whisk everything together until well combined to create the flavorful soy marinade.

Step 5

Pour the soy marinade into an airtight container or a serving dish. Carefully place the peeled soft-boiled eggs into the marinade. Artfully arrange the prepared minced vegetables on top and sprinkle with toasted sesame seeds for an appealing presentation. Cover the container and refrigerate for at least 1 hour before serving.
