Addictive Soy-Marinated Eggs (Mayak Gyeran-jang)

Mayak Gyeran-jang: An Irresistible Rice Thief!

I bought a whole carton of eggs on sale at the supermarket and decided to make this addictive soy-marinated egg dish. I suspect it’s the next best thing after marinated crabs for stealing your rice! It’s incredibly flavorful and so easy to make.

Main Ingredients
  • 10 Eggs (for soft-boiling)
  • 1 Onion (finely chopped)
  • A small bunch of Green Onion (finely chopped)
  • 2 Cheongyang Peppers (seeds removed, finely chopped, adjust to taste)
  • 2 Tbsp Vinegar (for boiling eggs)

Addictive Marinade
  • 1 cup Kelp Soy Sauce
  • 1 cup Apple Vinegar
  • 1 cup Sugar
  • 1 cup Water
  • 1 tsp Minced Garlic
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Toasted Sesame Seeds

Cooking Instructions

Step 1

Boiling the Eggs: For easy peeling, let eggs sit at room temperature for about 30 minutes before boiling if they’ve been refrigerated. Place eggs in a pot, cover with water, and add 2 tablespoons of vinegar. This helps prevent cracking and makes peeling easier. (Note: I used 10 eggs for the marinated eggs and ate the other 5 separately.)

Step 2

Cooking Time: Once the water reaches a rolling boil, gently stir the eggs once or twice to prevent them from sticking to the bottom. Boil for exactly 8 minutes for perfectly soft-boiled yolks.

Step 3

Cooling and Peeling: Immediately transfer the boiled eggs to a bowl of ice-cold water for at least 10 minutes. This cooling process helps the shell separate easily. Once completely cooled, carefully peel the eggs and place them in an airtight container, ensuring they are dry.

Step 4

Chopping the Green Onions: Wash the green onions thoroughly and finely chop both the white and green parts.

Step 5

Chopping the Onion: Peel and finely chop the onion. The sweetness of the onion will add a wonderful depth to the marinade.

Step 6

Preparing the Cheongyang Peppers: Remove the stems from the Cheongyang peppers, lightly shake out the seeds, and finely chop them. Add these for a spicy kick, or omit if you prefer it milder.

Step 7

Making the Marinade: In a bowl, combine 1 cup of kelp soy sauce, 1 cup of apple vinegar, 1 cup of sugar, and 1 cup of water. These equal parts create the perfect balance. Add the chopped green onions, onion, and Cheongyang peppers. Stir in 1 teaspoon of minced garlic, 1 tablespoon of sesame oil, and 1 tablespoon of toasted sesame seeds. Mix well until all ingredients are incorporated.

Step 8

Marinating and Serving: Pour the prepared marinade over the soft-boiled eggs in the container, ensuring they are mostly submerged. Cover the container and refrigerate for at least 1-2 days to allow the flavors to meld. The longer they marinate, the richer the taste! Enjoy your delicious Mayak Gyeran-jang.
