Main Ingredients

  • 120g ground pork
  • 2 handfuls of chives (approx. 40g)
  • 1 handful of the white part of green onions (approx. 30g)
  • 1 handful of seasoned seaweed flakes (gim)
  • 1 egg yolk

Mazesoba Sauce & Noodle Seasoning

  • 1 Tbsp minced garlic (15g)
  • 2 Tbsp soy sauce (30ml)
  • 2 Tbsp mirin (sweet rice wine) (30ml)
  • 1 Tbsp oyster sauce (15ml)
  • 1.5 Tbsp sugar (15g)
  • 2 Tbsp chili oil (30ml)
  • 1 Tbsp soy sauce (15ml) (for noodle seasoning)
  • 1 Tbsp vinegar (15ml) (for noodle seasoning)
  • 1 Tbsp sugar (10g) (for noodle seasoning)

Cooking Instructions

Step 1

First, prepare the chives and green onions that will add aroma and texture to your mazesoba. Chop the chives into roughly 2-3 cm lengths. Finely chop the white parts of the green onions. Fresh vegetables are key to a delicious outcome.

Step 2

Heat a pan over medium heat and add about 1 tablespoon of cooking oil. Add the chopped green onions and minced garlic (1 Tbsp) and sauté for about 1 minute until fragrant. It’s important to let the garlic and onion oils infuse well.

Step 3

Now, add the ground pork (120g) and stir-fry until the pink color disappears and the pork is lightly browned. Break up any clumps of pork with your spoon while cooking to ensure even cooking.

Step 4

Once the pork is cooked, add the mirin (2 Tbsp), soy sauce (2 Tbsp), oyster sauce (1 Tbsp), sugar (1.5 Tbsp), and chili oil (2 Tbsp). Stir-fry together for another 1-2 minutes until the sauce is well combined with the pork. This forms the base of your flavorful mazesoba sauce.

Step 5

In a separate pot, bring plenty of water to a boil and cook your desired noodles (like udon or ramen noodles). Once the noodles are cooked, rinse them under cold water, then wash with lukewarm water and drain thoroughly. Place the cooked noodles in a bowl and add the seasoning ingredients for the noodles: soy sauce (1 Tbsp), vinegar (1 Tbsp), and sugar (1 Tbsp). Gently mix them together.

Step 6

Arrange the seasoned noodles in a serving bowl. Generously spoon the prepared pork mixture over the noodles. Finally, artfully top with the chopped chives and seasoned seaweed flakes. If you like, sprinkle some sesame seeds on top. Placing the egg yolk in the center will add richness and flavor. Mix everything well and enjoy your delicious mazesoba!
