Main Ingredients- 5 eggs
- 1 stalk of scallion or small green onion
- 1/2 small onion
- 3 Korean green chili peppers (Cheongyang peppers)
- A small amount of carrot
Marinating Sauce- 4 soju cups of water
- 3 Tbsp soy sauce
- 3 Tbsp brown sugar
- 2 Tbsp sesame oil
- Sesame seeds, for garnish
- 1/2 Tbsp minced garlic
- 4 soju cups of water

Cooking Instructions
Step 1
About 30 minutes before boiling, take the eggs out of the refrigerator to bring them to room temperature. (Boiling cold eggs directly can cause them to crack due to the temperature difference.) Fill a pot with plenty of water, add 1 Tbsp of salt and 1 Tbsp of vinegar. Once the water boils, carefully place the eggs in and boil. For soft-boiled eggs, cook for 5-6 minutes; for hard-boiled eggs, cook for 10 minutes.
Step 2
Immediately transfer the boiled eggs to cold water to cool them down. Once cooled, carefully peel the shells and set aside. If the shells are difficult to remove, try gently cracking them all over and then soaking them in cold water for a few minutes.
Step 3
Prepare the vegetables for the marinade. Finely mince the carrot, green chili peppers, onion, and green onion. The finer you mince the vegetables, the better the marinade will infuse into the eggs.
Step 4
Now, let’s make the addictive soy sauce marinade. Using a measuring cup or a soju cup, combine 3 parts soy sauce with 4 parts water. (You can adjust the amount of soy sauce to your preference.)
Step 5
Add 3 Tbsp of brown sugar for sweetness. Sugar enhances the savory flavor and contributes to a smooth taste.
Step 6
Pour in 2 Tbsp of sesame oil for a rich, nutty aroma. The fragrant sesame oil will make the marinated eggs even more delicious.
Step 7
Finally, add 1/2 Tbsp of minced garlic and sprinkle generously with sesame seeds for extra flavor and aroma. Sprinkling sesame seeds at the end preserves their fresh, nutty taste.
Step 8
Stir all the prepared marinade ingredients together with a spoon until the sugar is completely dissolved. Ensure there are no sugar lumps for a smooth, well-mixed marinade.
Step 9
Carefully place the peeled boiled eggs into the prepared Mayak Gyeranjang marinade. Cover the container and refrigerate for at least half a day, or preferably longer, to allow the flavors to fully penetrate the eggs. Enjoy your delicious, well-marinated eggs!
