  • 300g Pork Belly (about 1.5cm thick)
  • Using fresh pork belly is recommended.

Cooking Instructions

Step 1

First, prepare 300g of fresh pork belly. Cut it into bite-sized pieces, about 1.5cm thick or 5-6cm in length. This size allows the marinade to penetrate well and makes it easy to cook.

Place all the cut pork belly pieces into a large bowl. Using a sufficiently sized bowl will ensure the marinade coats the meat evenly.

Now, let’s make the delicious marinade! In the bowl with the pork belly, add 1 Tbsp gochujang, 1 Tbsp fine gochugaru, 1 Tbsp soy sauce, 1 Tbsp sugar, 0.5 Tbsp oligodang, 1 Tbsp mirin, 1 Tbsp minced garlic, and finally, 1 Tbsp sesame oil. Using your hands or a spatula, gently mix and coat the pork belly thoroughly with the marinade, ensuring no piece is left uncoated. Let it marinate for at least 10 minutes for deeper flavor.

Prepare a frying pan. Line the pan with parchment paper (baking sheet). This prevents the pork belly from sticking to the pan and allows for less oil usage, making cleanup much easier – a win-win!

Arrange the marinated pork belly onto the parchment-lined pan, making sure the pieces are not overlapping. You can include any remaining marinade from the bowl onto the pan as well.

Now, cook the pork belly over medium-low heat. Avoid high heat, as it can burn the outside while leaving the inside undercooked. Flip the pieces occasionally to ensure they cook evenly and are nicely browned. When a delicious aroma fills the air, it’s ready to be served!
