Main Ingredients- 1 pack (approx. 500g) chicken thighs
- 1/2 pack (approx. 300g) mill-tteok (rice cakes for tteokbokki)
- 2 stalks green onions
- 3 pinches sea salt
Tteokbokki Sauce (Wonderful Eonam Sauce)- 2 Tbsp gochujang (Korean chili paste)
- 2 Tbsp guk-ganjang (Korean soup soy sauce)
- 3 Tbsp ketchup
- 2 Tbsp gochugaru (Korean chili flakes)
- 4 Tbsp sugar
- 1 Tbsp minced garlic
- 2 Tbsp water

- 4 Tbsp mayonnaise
- 1 Tbsp honey
- 2 Tbsp gochujang (Korean chili paste)

- 4 Tbsp sugar
- 1 Tbsp minced garlic

Cooking Instructions
Step 1
First, rinse the chicken thighs under running water and then place them in a colander to drain completely. This helps prevent oil splattering when frying and ensures a crispier texture.

Soak the mill-tteok in cold water for about 10 minutes. This prevents them from sticking together and softens them. Drain them in a colander before use.

Cut the two stalks of green onions into 4-5 cm lengths. For the white parts, you can cut them lengthwise into 2-4 pieces to match the size of the rice cakes (cutting them to a similar size as the mill-tteok, as shown by Bang Blee, is also great!).

Now, let’s make the ‘Wonderful Eonam Sauce,’ the heart of this delicious chicken tteokbokki. In a bowl, combine 2 Tbsp gochujang, 2 Tbsp guk-ganjang, 3 Tbsp ketchup, 2 Tbsp gochugaru, 4 Tbsp sugar, 1 Tbsp minced garlic, and 2 Tbsp water. Mix well until the sugar is dissolved.
Step 5
Preheat a frying pan over high heat. Add the chicken thighs and sear them for about 2 minutes per side until lightly browned. This initial searing helps create a crispy exterior.

Once the chicken starts to turn golden brown, sprinkle 3 pinches of sea salt over it. Then, generously drizzle a loop of olive oil around the pan. The olive oil will help the chicken cook evenly and become more tender.
