Main Ingredients

  • Acorn Jelly (Dotori Muk) 150g
  • Chives 100g
  • Onion 1/4 medium
  • Lettuce 20g

Seasoning

  • Soy Sauce 2 Tbsp
  • Red Pepper Flakes 2 Tbsp
  • Anchovy Sauce (Kanari Aekjeot) 1 Tbsp
  • Sugar 1 Tbsp
  • Minced Garlic 2/3 Tbsp
  • Sesame Oil 1 Tbsp
  • Toasted Sesame Seeds 1 Tbsp

Cooking Instructions

Step 1

First, let’s prepare the flavorful seasoning. In a small bowl, combine 2 tablespoons of soy sauce and 2 tablespoons of red pepper flakes. Add the remaining ingredients: 1 tablespoon of anchovy sauce, 1 tablespoon of sugar, 2/3 tablespoon of minced garlic, 1 tablespoon of sesame oil, and 1 tablespoon of toasted sesame seeds for that nutty aroma. Whisk everything together until well combined. It’s as simple as that! (Tip: You can substitute soy sauce with Korean soup soy sauce, or add finely chopped chili peppers for extra spice.)

Step 1

Step 2

Now, let’s clean and prepare the fresh vegetables. Start by trimming any yellow or damaged leaves from the chives and wash them thoroughly under running water. Gently pat them dry, then cut them into approximately 3-4 cm (about 1.5 inches) lengths. Wash the lettuce leaves carefully, drain them well, and then tear or cut them into bite-sized pieces.

Step 2

Step 3

It’s time to cut the acorn jelly. Acorn jelly typically comes in a long log shape. First, slice it into rounds about 1 cm (about 0.4 inches) thick, and then cut these rounds into strips. It’s best to cut them slightly thick, about 1-1.5 cm, so they don’t break apart easily during mixing and maintain a pleasant chewiness. (Tip: For an even chewier and softer texture, briefly blanch the acorn jelly in boiling water for about 30 seconds, then rinse under cold water and drain well.)

Step 3

Step 4

Now, we’ll start mixing. Add the prepared chives and lettuce to the bowl containing the seasoning. Gently toss them to coat the greens with the dressing.

Step 4

Step 5

Let’s add the onion for a nice crunch. Thinly slice the 1/4 onion. Scatter the sliced onion over the greens in the bowl.

Step 5

Step 6

Finally, it’s time to add the star ingredient – the acorn jelly! Carefully add the cut acorn jelly to the bowl with the seasoned vegetables. Using your hands, gently and thoroughly mix everything together. Be sure to handle it gently to avoid breaking the jelly. Ensure all the ingredients are evenly coated with the dressing.

Step 6

Step 7

To finish, let’s sprinkle on some toasted sesame seeds for extra flavor and texture. Add about 1 tablespoon of sesame seeds over the mixed salad. Give it one or two more gentle tosses to distribute the seeds evenly.

Step 7

Step 8

Voila! Your delicious Acorn Jelly and Chive Salad is ready. Transfer the vibrant and appetizing salad to a beautiful serving dish. This fresh and healthy side dish is perfect for any meal, especially when you’re craving something light and flavorful!
