A quick and easy dish perfect as a light snack or a delightful accompaniment to drinks! This salad combines the chewy texture of acorn jelly with crisp vegetables for a burst of refreshing flavor.

- 1 pack Acorn Jelly (Dotori Muk, approx. 300g)
- 10 Lettuce leaves
- 1 Cucumber (medium-sized)

- 3 Tbsp Soy Sauce
- 1 Tbsp Minced Garlic
- 1 Tbsp Red Pepper Flakes (Gochugaru)
- 1 Tbsp Sugar
- 1 Tbsp Vinegar (adjust to taste)
- 1/2 Tbsp Toasted Sesame Seeds (optional)
- 1 Tbsp Sesame Oil
- 3 Tbsp Soy Sauce
- 1 Tbsp Minced Garlic
- 1 Tbsp Red Pepper Flakes (Gochugaru)

Step 1
Let’s start by preparing a delicious dressing. In a bowl, combine 3 tablespoons of soy sauce, 1 tablespoon of minced garlic, 1 tablespoon of red pepper flakes, 1 tablespoon of sugar, and 1 tablespoon of vinegar for that perfect tanginess. Stir well. Finally, add about 1/2 tablespoon of toasted sesame seeds and 1 tablespoon of sesame oil for a rich aroma. Mix gently until all ingredients are well combined. Your flavorful dressing is ready!
Step 2
Thoroughly wash the fresh lettuce leaves under running water. Gently pat them dry. Tear the lettuce leaves into bite-sized pieces, about 2-3 cm wide, using your hands. Tearing rather than cutting helps the dressing adhere better and enhances the texture.

Trim the ends of the washed cucumber. Slice it lengthwise into strips about 5 cm long. Then, cut these strips into thin, half-moon shapes, approximately 0.3 cm thick. This slicing method makes it easy to enjoy with the acorn jelly and adds a satisfying crispness.

Lightly rinse the acorn jelly under cool running water. Using a specialized jelly cutter or a regular knife, slice the jelly into strips about 1.5 cm thick and of a suitable length, or into bite-sized pieces (around 2-3 cm). Be careful not to slice it too thinly, as it can easily break apart.
Step 5
Now it’s time to bring all the ingredients together. In a large mixing bowl, add the torn lettuce, the sliced cucumber, and the cut acorn jelly.
Step 6
Pour the prepared dressing evenly over the ingredients in the bowl. Wash your hands thoroughly, then gently mix everything together, being careful not to mash the acorn jelly. Toss the salad gently (‘joom-joom’) until the dressing is well distributed. Your delicious, tangy, and chewy acorn jelly salad is complete! For an extra touch, you can garnish with crushed nuts or finely chopped green onions.
