Acorn Jelly Cold Noodle Soup (Muk Ssam)
The Ultimate Diet Food! Make a Refreshing and Delicious Muk Ssam with Firm Acorn Jelly
I brought back some acorn jelly, lovingly made by my mother-in-law using hand-picked acorns, and decided to make a refreshing Muk Ssam. This homemade acorn jelly is wonderfully firm and packed with flavor! Acorn jelly is rich in tannins, which help inhibit fat absorption and promote the breakdown of triglycerides, making it a champion for weight loss. Main Ingredients- 1/2 block Acorn Jelly (approx. 300g)
Chilled Broth- 1L Water
- 2 stalks Green Onion
- 1 packet Kelp & Anchovy Broth Pack (or homemade broth)
- 2 Cheongyang Peppers
Flavorful Toppings- 1/4 head Well-fermented Napa Cabbage Kimchi
- Seaweed Flakes, a little
- 3 Green Onions
- 1 Tbsp Toasted Sesame Seeds
Savory Seasoning Sauce- 4 Tbsp Soy Sauce
- 1/2 Tbsp Minced Garlic
- 1 Tbsp Perilla Oil
- 1L Water
- 2 stalks Green Onion

Cooking Instructions
Step 1
In a pot, combine 1 liter of water, 2 stalks of thoroughly washed green onions, 2 Cheongyang peppers, and 1 broth pack. Bring to a boil over high heat. Once boiling, reduce heat to medium and simmer for about 15 minutes to create a deep and refreshing broth.
Step 2
While the broth is simmering, slice the acorn jelly into bite-sized pieces. Aim for about 1cm thickness, then cut into 1cm wide strips, and finally into 7-8cm lengths (refer to the photo for guidance). Arrange the sliced jelly in a serving bowl. Finely chop the well-fermented Napa cabbage kimchi – a slightly sour, ripe kimchi will add more depth of flavor than very fresh kimchi.
Step 3
Prepare the seasoning sauce for the toppings. In a small bowl, mix together 4 tablespoons of soy sauce, 1/2 tablespoon of minced garlic, and 1 tablespoon of nutty perilla oil.
Step 4
Prepare the remaining toppings. Finely chop 3 green onions after washing them. Have some crispy seaweed flakes ready. Finally, prepare 1 tablespoon of toasted sesame seeds to add color and aroma.
Step 5
Once the broth has simmered for 15 minutes, strain out the solids to get a clear liquid. Pour the hot broth over the prepared acorn jelly in the bowl. If the broth is too hot, you can let it cool slightly before pouring.
Step 6
Arrange the chopped kimchi, sliced green onions, seaweed flakes, and sesame seeds attractively on top of the acorn jelly. Just before serving, drizzle with the prepared seasoning sauce and mix well to enjoy this refreshing and healthy Acorn Jelly Cold Noodle Soup (Muk Ssam)! You can also add rice to the leftover jelly and broth to make a hearty Muk Bap.
