Abundant Vietnamese Spring Rolls with a Variety of Vegetables and Ingredients

After watching Park Bo-gum enjoy Vietnamese spring rolls so deliciously on ‘Hyori’s Homestay’, I felt inspired to make them myself and bought all the ingredients. I’ve also been seeing a lot of Vietnamese spring roll recipes on Instagram lately; the power of television is truly strong! I briefly considered making rice noodles as well, but decided against making it a bigger production and held back my urge. Haha!
Main Ingredients- 1 pack Rice paper wrappers
- 1 Red bell pepper
- 1 Yellow bell pepper
- 1 Cucumber
- 1/2 Apple
- Canned pineapple slices or rings, as needed
- Pickled radish, as needed
- 1 bunch Bean sprouts
- 10 Perilla leaves
- 1 pack Mixed greens or sprouts
- 1/4 Red cabbage
- 10-12 Cooked shrimp, peeled and deveined
- 1 Tbsp Cooking wine (for shrimp)
- Pinch of black pepper (for shrimp)
- 3-4 Imitation crab sticks (surimi)
- 3-4 Slices of ham (e.g., kimbap ham)
- Sweet chili sauce
Cooking Instructions
Step 1
For the ham, I used kimbap ham, which is a thinly sliced ham perfect for rolling. You could also use bacon or fish cakes if you prefer. For a richer flavor, consider grilling thinly sliced beef or pork to add. I pre-marinated the cocktail shrimp with 1 tablespoon of cooking wine and a pinch of black pepper to remove any fishy odor. Then, I briefly boiled them until they turned pink. (I realized I didn’t take a photo of boiling the shrimp, but simply add them to boiling water for about 1-2 minutes until they are cooked through). Prepare all the other vegetables, fruits, ham, and imitation crab sticks by slicing them into similar, bite-sized pieces. I cut the pineapple into pieces roughly the same size as the shrimp.

I personally prefer the square-shaped rice paper wrappers over the round ones, so I bought a pack of those. Prepare a shallow bowl with warm water. Dip one rice paper wrapper into the warm water for a few seconds until it becomes soft and pliable. Lay it flat on a clean surface and arrange your desired fillings in the center. Fold in the sides and then roll it up tightly like a burrito. Dip your freshly made spring roll generously into the sweet chili sauce and enjoy! Since there are so many ingredients, your spring rolls might turn out quite large, so be ready to savor a big, satisfying bite!

My partner asked why I prepared such a wide variety of ingredients today. Haha! Come to think of it, I counted about 13 different main ingredients. While I missed adding about two things I initially thought of, it’s still a wonderfully abundant and satisfying spread.
