  • Sugar, 2 Tbsp
  • Olive oil, 2 Tbsp
  • Warm water, approx. 100ml (35-40°C)

First, sift 2 cups of bread flour for the pizza dough until fine. This will result in a smoother dough.

On the sifted flour, place the salt, instant dry yeast, and sugar in three separate spots. It’s best to keep the yeast and salt from direct contact.

Gradually add the warm water (approx. 100ml) while mixing with a spatula or your hands until no dry flour remains. The amount of water might need slight adjustment depending on the flour’s moisture content.

Once the mixture comes together into a rough ball, transfer the dough to a work surface and begin kneading. Use the heel of your palm to push and fold the dough, repeating this process for about 5-7 minutes until the dough becomes smooth and elastic. Thorough kneading is crucial.

When the dough is somewhat smooth, add 2 Tbsp of olive oil and knead again thoroughly. Continue kneading until the olive oil is fully incorporated and the dough has a glossy sheen. This will result in a chewier crust.

Shape the well-kneaded dough into a ball, place it in a clean bowl, and cover with plastic wrap. Pierce the wrap a few times with a fork. Then, microwave the bowl for about 1 minute to warm the interior. (This step is to warm the microwave, not the dough.) Place the dough bowl back inside the warm microwave, close the door, and let it proof for 1 to 1.5 hours. A warm environment aids fermentation.
