  • Scallions 2 stalks (cut into thick strips)
  • Shiitake Mushrooms 3 (stems removed, sliced)
  • Enoki Mushrooms 1/2 (base trimmed, separated)
  • King Oyster Mushrooms 2 (sliced for easy eating)
  • Carrot 1/4 (julienned)
  • Dried Glass Noodles 1 handful (approx. 50g)

Hot Pot Seasoning

  • Water 3 cups (approx. 600ml)
  • Soy Sauce 7 Tbsp
  • Sugar 3 Tbsp
  • Cooking Wine (Mirin, etc.) 2 Tbsp
  • Commercial Pear Juice or Grated Pear 100ml
  • Minced Garlic 1 Tbsp
  • Sesame Oil 1 Tbsp
  • Black Pepper to taste

Cooking Instructions

First, prepare the glass noodles. If you’re using wide glass noodles, soak them in lukewarm water for at least 2 hours until they become soft. If you’re short on time, soak the noodles in cold water for about 15 minutes, then briefly boil them in hot water for 2-3 minutes. This prevents them from becoming mushy in the hot pot and retains their chewy texture.

Slice all the vegetables and mushrooms for the hot pot into bite-sized pieces. I’ve julienned everything to a similar length for a uniform look. This not only makes the dish visually appealing but also allows the flavors to meld beautifully into the broth as it simmers. Feel free to add more types or amounts of mushrooms you enjoy, but if you increase the mushroom quantity, slightly adjust the seasoning proportions (like soy sauce or sugar) accordingly.

Cut the scallions into thick strips. Scallions play a crucial role in making the hot pot broth refreshing and cutting through the richness of the beef, enhancing the overall flavor profile. Don’t skimp on them!

Now, let’s make the delicious hot pot seasoning! In a large bowl, combine 3 cups of water with 7 Tbsp soy sauce, 3 Tbsp sugar, 2 Tbsp cooking wine, 100ml pear juice, 1 Tbsp minced garlic, 1 Tbsp sesame oil, and a pinch of black pepper. Stir well with a whisk or spoon until the sugar is completely dissolved.

Add the thinly sliced beef to the seasoning mixture and gently mix it with your hands to coat evenly. Marinating the beef in this seasoning allows the flavors to penetrate deeply, resulting in a much more tender and delicious hot pot. Let it marinate for at least 30 minutes in the refrigerator. If time permits, marinating for about an hour would be even better.
