- 7-8 fragrant perilla leaves
- 2 spicy Cheongyang chili peppers (adjust spiciness)
Enchanting Cold Soup Broth- 240ml chilled Korean pear drink (adds pear flavor)
- 350ml commercial cold noodle broth (for a clean base)
- 1 Tbsp gochujang (heaping, adds depth of flavor)
- 7 Tbsp cho-gochujang (level, enhances umami)
- 1 Tbsp gochugaru (fine powder, adds color and mild heat)
- 1/2 Tbsp minced garlic (for a hint of aroma; reduce if garlic flavor is too strong)
- 5 Tbsp vinegar (enhances sourness. Can substitute with lemon juice for added zest and richer flavor!)
- 1 Tbsp sesame oil (for finishing fragrance)

Cooking Instructions
Step 1
First, thoroughly wash and prepare all the vegetables for the cold soup. Julienne the cucumber, and thinly slice the carrot and onion into similar-sized strips. Finely chop the green onions and julienne the perilla leaves. Remove the seeds from the Cheongyang chili peppers and thinly slice them. (If you prefer spicier, you can leave the seeds in.)

Arrange the prepared vegetables attractively in a large bowl. For the fresh abalone, separate the meat from the shell, remove the innards, and slice thinly. Slice the squid sashimi into bite-sized pieces. Place the prepared abalone and squid beautifully over the vegetables. (Slightly blanching the abalone or partially freezing it before slicing can make it more tender.)
