Abundant Bean Sprout Tteokbokki Soup
How to Make Tteokbokki Soup with Plenty of Bean Sprouts
This Tteokbokki soup is packed with refreshing broth and crisp bean sprouts, making it perfect as a hangover cure! We’ve used tteokguk tteok (rice cake soup slices) for a chewy texture, and the generous amount of bean sprouts and rich seasoning will make you want to finish a whole bowl of rice with it. This recipe was inspired by a fellow blogger’s creation. Enjoy a satisfying meal at home, even on ordinary days!
Main Ingredients
- 200g Tteokguk tteok (rice cake soup slices), rinsed in cold water
- 2 sheets of square fish cakes, cut into bite-sized pieces
- 200g bean sprouts, washed thoroughly
- 1/3 stalk of green onion, sliced diagonally
- 3 cups water (approx. 600ml)
- A pinch of sesame seeds for garnish
Seasoning Sauce
- 2 Tbsp Gochugaru (Korean chili powder)
- 2 Tbsp sugar
- 1 Tbsp minced garlic
- 2 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp oyster sauce
- 2 Tbsp Mirin (rice wine for cooking)

Cooking Instructions
Step 1
First, let’s make the seasoning sauce for our delicious Tteokbokki soup. In a bowl, combine 2 Tbsp gochugaru, 2 Tbsp sugar, 1 Tbsp minced garlic, 2 Tbsp gochujang, 2 Tbsp oyster sauce, and 2 Tbsp mirin.
Step 2
Using a spatula or spoon, mix all the sauce ingredients thoroughly until well combined and smooth, creating our flavorful seasoning sauce.
Step 3
Now, pour 3 cups (approx. 600ml) of water into the pot you’ll be cooking in. Add the prepared seasoning sauce and stir well to dissolve any clumps, ensuring the sauce is fully mixed into the water.
Step 4
Once the seasoned water starts to boil, add the tteokguk tteok, washed bean sprouts, and cut fish cakes. Bring to a simmer over medium-low heat, allowing the ingredients to cook evenly.
Step 5
Simmer until the rice cakes are soft and fully cooked. Stir gently occasionally to prevent the rice cakes from sticking to the bottom of the pot, as the broth will reduce during cooking.
Step 6
When the rice cakes have reached your desired tenderness, add the diagonally sliced green onions and let it simmer for another moment.
Step 7
Stir gently and cook for another 1-2 minutes, allowing the green onions to soften slightly and all the flavors to meld together beautifully.
Step 8
Your delicious Tteokbokki soup with abundant bean sprouts is now ready! Serve hot, garnish with a sprinkle of sesame seeds, and enjoy. It’s also incredibly tasty served over rice!
