  • 5 dried jujubes (Korean dates)
  • 10 ginkgo nuts

  • 1 cup glutinous rice (approx. 150g)

First, wash all your ingredients thoroughly. Rinse the chicken under running water and pat it dry. For the abalone, use a brush to scrub the shell and the area between the shell and the meat until clean. Rinse the jujubes, ginkgo nuts, and garlic cloves. (If you enjoy herbal ingredients, you can prepare and add things like Astragalus root or ginseng at this stage.)

Rinse the glutinous rice until the water runs clear, then soak it for about 30 minutes to an hour. Soaking the rice makes it cook up soft and sticky inside the chicken.

Now, let’s tackle the crucial step of preparing the chicken. Trim off the thick fatty part near the tail and around the anus. This area can cause a gamey smell, so cutting it off cleanly is essential for a clear broth. Leaving it on can make the soup cloudy and unappetizing.

Check inside the chicken cavity for any remaining clumps of fat or residual innards. Scrape these out and discard them. Even pre-packaged chickens might have a little bit left, so be thorough to ensure no unpleasant tastes.

Now, let’s cook the Samgyetang using the rice cooker. Place the soaked glutinous rice at the bottom of the inner pot, then place the prepared chicken on top. Pour in enough water so that the chicken is about two-thirds submerged. (Adjust the water level based on your rice cooker size and the chicken’s size. For a typical 6-cup rice cooker, filling water halfway up the chicken is usually sufficient.)
