Main Ingredients- 5 fresh abalones
- 1 cup of short-grain rice (approx. 180ml)
- 2 tablespoons of fragrant sesame oil
- Wild chive sauce (homemade or store-bought, to taste)
Cooking Instructions
Step 1
First, thoroughly scrub the abalones with a brush to clean both the shell and the meat. Separate the meat from the shell, then remove the hard mouth part and the innards, cleaning them carefully. Finely chop the innards to be cooked with the rice. Rinse the rice and let it soak for about 30 minutes, then drain it well. Place the cleaned and chopped abalone, its innards, and the soaked rice together in a rice cooker (or pressure cooker).
Step 2
Drizzle 2 tablespoons of sesame oil over the rice for a rich, nutty flavor. Cook the rice using the regular setting on your rice cooker. If using a pressure cooker, add water to just cover the ingredients, bring to a boil, then reduce heat to medium-low once it starts to whistle. Let it steam for about 5-7 minutes, then turn off the heat. For pressure cookers, it’s best to wait until the pressure has completely released before opening the lid.
Step 3
Serve the freshly cooked, warm, and glossy abalone rice in a bowl. Generously spoon the prepared wild chive sauce over the top of the rice.
