Main Ingredients

  • 5 fresh abalones
  • 2 cups (approx. 360ml) short-grain rice
  • 420ml water
  • 4 shiitake mushrooms (dried or fresh)
  • 1 Tbsp sesame oil
  • 1 Tbsp cooking wine (cheongju or mirin)

Seasoning Sauce

  • 4 Tbsp soy sauce
  • 3 Tbsp finely chopped green onions
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp minced garlic
  • 2 chopped Korean green chili peppers (optional)
  • 1 Tbsp sesame oil
  • 1 Tbsp water
  • 1 tsp toasted sesame seeds

First, rinse the rice thoroughly and let it soak in water for about 1 hour. Drain the rice completely to ensure the cooked rice isn’t too mushy.

Look at these fresh, plump abalones! Abalone is a perfect choice for a nourishing meal, especially in the summer. It’s packed with various vitamins and minerals and is known to be beneficial for its immune-boosting properties. It’s also a versatile ingredient that works wonderfully for dinner parties or special celebrations.

Cleaning abalone at home is surprisingly simple! Grab a kitchen scrub brush or a new toothbrush. Gently scrub the surface of the abalone shell to remove any dirt or impurities.

Rinse it under running water, and you’ll see how clean the shell becomes. Easy, right?

Now, let’s separate the abalone meat from the shell. Hold the abalone firmly. Insert a spoon between the shell and the meat, and use it as a lever to gently pry the meat away from the shell.

Once the meat is separated, flip it over. You’ll find the innards attached. Gently pull the innards away to remove them cleanly.

At the base of the abalone meat, you’ll find a hard ‘beak’ and chewy tentacles. Press down on the beak with your finger to remove it, and also clean up the tentacles.

For the abalone pot rice, thinly slice the abalone meat (about 5 pieces) into strips, not too thin so you can enjoy the texture. Chop the removed innards into bite-sized pieces with scissors.

Thinly julienne the shiitake mushrooms, similar in thickness to the abalone. Their aroma will complement the rice beautifully.

Now, let’s cook the pot rice. Heat a pot over medium heat and add 1 Tbsp of sesame oil. Add the chopped abalone innards and 1 Tbsp of cooking wine. Sauté for about 1 minute to remove any fishy odor and enhance flavor. Then, add the soaked rice and stir-fry for 1-2 minutes until the grains become slightly translucent.

Pour in 420ml of water and mix gently. Cover the pot with a lid and bring to a boil over high heat (around level 8 on an induction cooktop) for about 4-5 minutes, until you see steam rising.

Once it starts boiling and steaming, lift the lid and gently stir the rice once. Arrange the julienned shiitake mushrooms and sliced abalone evenly over the rice. Cover the pot again and reduce the heat to low (around level 2-3 on an induction cooktop). Let it simmer for about 10 minutes. After simmering, turn off the heat and let the rice steam, covered, without lifting the lid, for about 7 minutes. This steaming process ensures the rice grains are fluffy and perfectly cooked.
