Abalone Pan-Seared with Perilla Oil

Ingredients- 6 fresh abalones
- 1 Tbsp perilla oil
- 2 pinches of salt
Cooking Instructions
Step 1
Gently scrub the abalones with a brush to remove any dirt or debris, especially around the edges. Carefully separate the abalone meat from the shell using a knife. Be cautious not to puncture the innards while doing this.
Step 2
Remove the hard, black ‘beak’ or ‘teeth’ located at the bottom of the abalone’s underside. This ensures a smoother eating experience.
Step 3
To prepare the abalone for searing, score the flesh with a knife. Make diagonal cuts across the surface of the abalone meat. This not only makes it look appealing but also helps it cook more evenly and tenderly.

While many enjoy abalone seared in butter, we’re going to embrace the nutty aroma of perilla oil today! Lightly sprinkle a pinch of salt over the scored abalone.

Heat a pan over medium-high heat and add the perilla oil. Place the abalone in the hot pan and sear until golden brown on both sides. Avoid overcooking, as abalone can become tough. Sear for about 1-2 minutes per side, for a total of 3-4 minutes.
