Inspired by a dish I saw on the TV show ‘Three Meals a Day,’ I decided to try making this delightful abalone mushroom and bacon roll. The fresh, slightly bitter taste and chewy texture of the abalone mushroom combined with the savory, rich flavor of bacon create an irresistible bite. This simple yet sophisticated dish is perfect for entertaining guests or as a special treat for any occasion. It’s an excellent choice for both an appetizer and a side dish with your meal!

Main Ingredients

  • 6 strips of thick-cut bacon (about 1.5 cm thickness)
  • 10-15 stalks of fresh abalone mushrooms (trim the tough base)

Seasoning and Others

  • A pinch of black pepper (to taste)
  • A little cooking oil (if needed for the pan)

Cooking Instructions

Step 1

First, prepare the abalone mushrooms. Rinse them gently under running water. Trim off the tough, woody base of each stalk with a knife. If the base is very tough, you can lightly blanch them in boiling water to soften them before trimming. Thoroughly pat them dry with paper towels. Prepare 6 strips of bacon, long enough to wrap around the abalone mushrooms.

Now, it’s time to wrap the abalone mushrooms with bacon. Take one prepared abalone mushroom stalk and wrap a strip of bacon around it, rolling tightly. Ensure the bacon wraps snugly to hold the mushroom in place. If the bacon tends to unravel, you can secure it with a toothpick. Repeat this process until all abalone mushrooms and bacon strips are used. Finally, lightly season the rolled abalone mushroom and bacon rolls with a pinch of black pepper for extra flavor.

Heat a pan over medium heat and add a little cooking oil, or you can cook them in the rendered fat from the bacon. Place the rolled abalone mushroom and bacon rolls seam-side down in the hot pan. Cook, turning them occasionally, until all sides are golden brown and the bacon is crispy. This is where the magic happens: the bacon’s savory crispness will meld beautifully with the slightly bitter, earthy notes of the abalone mushroom. Be mindful of the heat to prevent burning. Once all sides are beautifully cooked, transfer them to a serving plate and enjoy while warm.
