Abalone Innards Fried Rice: Rich Flavor Explosion!

After enjoying delicious abalone butter-grilled, I decided to make fried rice with the nutritious innards. The result was incredibly delicious, so I’m sharing this recipe! This dish features the deep, savory flavor unique to abalone innards, coating every grain of rice. Enjoy a hearty and healthy meal with these beneficial ingredients. (Garnish ingredients are not included in this recipe.)

Main Ingredients

  • 3 fresh abalone innards
  • 1 bowl of warm cooked rice (approx. 200g)
  • 1/4 carrot, finely chopped
  • 1 Tbsp butter
  • 1 Tbsp oyster sauce
  • 1/4 onion, finely minced
  • 1 handful of chives, cut into approx. 2cm lengths
  • 1/3 tsp black pepper
  • Clean innards separated from the shell, with sand sacs removed

Cooking Instructions

Step 1

Prepare the abalone innards. They can be yellow or green, depending on whether they are male or female. Don’t worry if they burst slightly during preparation; finely chop them with scissors for easier cooking. Make sure to remove the sand sac. (To easily separate the abalone from its shell, it’s best to blanch it briefly and then rinse immediately in cold water.)

Finely chop the vegetables that will add texture to your fried rice. Mince the carrot and onion finely. Cut the fragrant chives into bite-sized pieces, about 2cm long.

Melt the butter in a heated frying pan over medium heat. Once the butter is melted, add the prepared abalone innards and stir-fry. As the innards begin to cook and release their aroma, you can optionally add some minced chili pepper for a spicy kick.

Once the abalone innards are starting to cook, add the chopped vegetables (carrot, onion) to the pan and stir-fry until they soften. Add the warm cooked rice, followed by 1/2 tsp of salt and 1/3 tsp of black pepper. Stir-fry evenly to combine. When the rice grains are starting to separate, add 1 Tbsp of oyster sauce and stir-fry quickly to coat everything with its savory flavor. Finally, add the cut chives and stir-fry just until they wilt.

Sprinkle with toasted sesame seeds for extra flavor and give the fried rice one final gentle toss to mix everything together. Taste and add a little more oyster sauce if needed to achieve your desired saltiness. This fried rice is best enjoyed immediately while warm!
