Main Ingredients- 4 fresh abalones (you can add more if you like!)

- 5-6 cloves of garlic
Cooking Instructions
Step 1
First, prepare the 4 fresh abalones. Clean them thoroughly, scrubbing the shells with a brush to remove any debris. Separate the meat from the shell and remove the innards. Slice the abalone into bite-sized pieces. (Feel free to increase the amount of abalone if you love its fresh flavor!)

If using frozen shrimp, thaw them by placing them in cold water or rinsing them under running water. Prepare about 10 shrimp.

Peel and thinly slice the 5-6 cloves of garlic. Slicing the garlic thinly will help it infuse its aroma beautifully into the oil. Don’t hesitate to use a little extra garlic for a more pronounced flavor.

Bring a large pot of water to a boil. Once boiling, add about 0.5 Tbsp of salt and a splash of olive oil to prevent the pasta from sticking. Add 2 servings of your chosen pasta and cook according to package directions, but aim for about 1-2 minutes less than al dente, as it will finish cooking in the sauce.

When the pasta is almost cooked, reserve about one cup of the pasta cooking water (pasta water). This starchy water will help emulsify the sauce and add richness.

In a large skillet, generously pour in olive oil and add the sliced garlic. Cook over medium-low heat, allowing the garlic to gently infuse its fragrance into the oil without burning. This slow infusion is key to a flavorful oil pasta.

Once the garlic becomes fragrant, add the thawed shrimp and sauté. As the shrimp begin to turn pink and cook, add the prepared abalone and continue to cook. Be careful not to overcook the abalone, as it can become tough.
