Seasoning Sauce
  • 3 Tbsp soy sauce
  • 1 Tbsp tuna extract (or fish sauce)
  • 1/2 Tbsp red pepper flakes (gochugaru)
  • 1 Tbsp minced garlic
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds
  • 2 Tbsp sugar
  • 1 stalk green onion, finely chopped
  • 3 chili peppers (e.g., jalapeños), finely chopped
  • 1 red chili pepper, finely chopped
  • 1/4 small onion, minced

Cooking Instructions

Step 1

Today, we’re making a nutritious rice cooker meal packed with fresh, seasonal shrimp, plump abalone, and fragrant shiitake mushrooms. This recipe is for 2 servings.

Step 2

First, rinse the rice and mixed grains under running water until clean. Drain them in a sieve and let them soak for about 30 minutes. Soaking helps the rice cook evenly and results in a chewier texture.

Step 3

Prepare the shrimp by peeling off the shells, deveining, and rinsing them thoroughly. For the abalone, use a brush to scrub the shells and clean between the shell and the meat to remove any debris. Remove the tough innards and teeth, then slice the abalone thinly. Clean the shiitake mushrooms by wiping off any dirt and trimming the stems.

Step 4

Let’s double-check all the ingredients for our rice cooker meal: 2 servings of rice, a little mixed grains, 3 shrimp, 3 abalones, 2 Tbsp perilla oil, 7 shiitake mushrooms (4 for broth, 3 for garnish), and 3 cups of broth.

Now, it’s time to cook the rice. Heat 2 Tbsp of perilla oil (or sesame oil) in a heavy-bottomed pot or a cast-iron pot over medium-low heat.

Add the drained rice and mixed grains to the pot. Stir-fry for about 1-2 minutes until the grains become slightly translucent. Be careful not to burn them. This step adds a nutty aroma to the rice.

Carefully pour the 3 cups of warm, pre-made broth over the stir-fried rice.

After adding the broth, check the water level to ensure the rice-to-liquid ratio is correct. You might want slightly less liquid than for regular steamed rice (e.g., for 2 cups of rice, use 3 cups of broth).

When you start to see water droplets dripping from under the lid (‘drip, drip, drip’), it’s time to reduce the heat to the lowest setting. Open the lid and artfully arrange the shrimp, abalone slices, and thinly sliced shiitake mushrooms on top of the rice. This is the steaming stage.

During the steaming process, keep the heat on the lowest setting for at least 10 minutes, with the lid closed. This allows the flavors of all the ingredients to meld beautifully into the rice, creating a deeper taste.
